Dhuaan Gosht Recipe:-
Ingredients: Mutton 1/2 kgYogurt - 1/2 kg
Onion - 1/2 kg
Garlic - 50 grams (1 chattank)
Ginger - 50 grams (1 chattank)
Mint/Podina - 1 guti
Green chilli - 5
Salt & Pepper - Hasb-e-Zarurat
Oil or Ghee - 1/4 kg
Pisa Dhaniya - 1 tea spoon
Basi roti ka aik tukra
Koyla - 1 bara sa..
Recipe: 1 pao pyaz, lehsan aur adrak ko bareek pees lein..
Gosht ko dho ker isme ye pisa hua 1 pao pyaz, adrak aur lehsan, nimak, mirch aur pisa dhaniya daal ker 2 pyali paani daal ker pakne dein..
Jab paani khushk hojaye to ghee daal ker khoob achi tarha bhoon lein.. takay ghee/oil ki smell na rahay.. yani kacha-pan na rahe aur gosht ghee chorne lagay..
Dahi ko phaint lein.. (Dahi khatti na ho)..
Baqi pyaz ko bareek bareek kaat lein..
Podinay ke pattay dho ker bareek kaat lein aur hari mirchein bhi kuttar lein..
Pyaz, podina aur hari mirchein ikathi mila dein..
Gosht jo bhuna hua hai usme dahi ki aik teyyhh(layer) lagaein..
Dusri teyyhh pyaz, mirchein aur podinay ki lagaein..
Phir dobara dahi ki teyyhh..
Phir dobara pyar aur podinay ki teyyhh..
Ab iske upar roti ka baasi tukra rakhein..
Us roti ke upar dehakta(red hot) hua aik bara koyla rakhein.. (jo pehle se chulhay per dehakne ke liye chora ho)…
Ab us koyle ke upar thora sa ghee/oil gira dein.. jab dhuaan uthne lagay to foran degchi ka dhakan de kar band ker dein..
5 minutes ke baad dhakan khol ker ehteyaat se koyla aur roti nikaal lein..
Dhuaan gosht is ready…

I can eat your lunch n dinner in one go.. In Pakistan people eat 3, 4 loafs at one time.. This is nothing.

Your food is always presented so well, after Safy went to Uni I cant find the motivation to cook, wifey is going low carb so lots of omelets for her so really no one to cook for.

Presentation is half the fun… the Japanese believe that you eat with your eyes first and foremost. A lot of times when my son is visiting other family I end up only cooking for myself which, I think, is it’s own small indulgence. Which state? Did you try any big desi store? If you visit stores like Patel brothers or Maharaja and tell them you need indian koyla they would arrange it from somewhere
