i thought the purpose of that paper on top of the pot was to collect all the water that steam leaves so it doesnt drip later.. :confused:

Shay: I dont do it this way, but i think the purpose of having it soaked is to increase the presense of steam, which i guess is good for cooking rice

Yaar these days the rice they sell are soo good that you dont need dam sham.

They cook always to perfection and are always fluffly.

Lol no i dint realize, hence the thread :p

yesterday i took it out, but it was only a tiny bit...and it defrosted pretty qickly, like in a half hour it was completely thawed. but i dint know it actually Cooks..

how bad is it to defrost chicken in hot water. Sometimes I have done that when you need to make chicken quickly and it wasnt taken out before. I am still feeling fine :) Hmm.

As for the rice, the "dum" thing kind of changes the flavor, rather than just mixing the masala with boiled rice, you put it in "dum" for that baked taste. You can also place the parboiled rice & meat/masala in a metal pot/pan and cover & put in the oven for "dum". The cloth soaked in water is just to retain moisture so the rice doesn't dry out in dam and it can cook thru. Sometimes I add a mixture of yogurt with milk in it to form less thick consistency...
and drizzle that over the rice before putting it in dam, it also gives it a tangy flavor. :)
Another thing you can do is add tandoori masala to the yogurt mixture...and drizzle that..it gives flavor plus color :)

Afro when you are in hurry then it is ok but you should make sure that you don't keep it in hot water too long. Try to partthe meat so you don't have to keep it in hot waterfor long. And as they always say that prevention is better then cure.

Couple semesters back I got really sick and my mom told my dad to make soup for me though I insisted her that I can make it myself but she didn't listen to me and went a head and told him to make it for me...lol (she was away from home at that time.) That was also the first week we were unable to make small packets of chicken. So what my dad did was take out the big pack of chicken, submerged in it a big pot of water and microwaved it. Don't ask me the results and don't ask me how I had finished the final product lol... But that gives you the answer "NEVER" even if the microwave booklet says you can.

So if i have a bunch of keema....i can just put it in the fridge overnight so its ready to cook tomorrow afternoon...i don't need to water or anything do I? How long can it stay in the fridge before it goes baD?

No just leave it in the fridge and it will be ready to cook tomorrow afteroon. Many ppl like running their keema under water once, many don't. It is up to you. But to thaw you can leave it in fridge over night and it should be thawed by tomorrow afternoon. It can stay in friadge for atleast 2 days before it would go bad.
