Can we have a new collection thread again as years before ? As to get some food/recipe ideas for iftari/sehri.

Sounds like a really good idea. Maybe people can post what they are having for iftar evryday.

Also, can somebody post a tried and extremely tasty recipe for samosas? :halo: pweez :stuck_out_tongue:

hello

for dough well my mom makes it, roll it out and freezes them sepreately. so I use hers but make the mixture myself.

for dought (I think) mom uses maida, water and some oil, salt. the rolled samosa roti it should be hard and thin.

for the mixture. I normally used aloo (you can add boiled keema too). boil aloo cut into small pieces, add green onion or normal onion, green chilli pepper, anar daana but grinde it first. salt, garam masala, red pepper powder, dryed and green daniya, zeera. mix all these together and let it sit for a while.

cut the samosa roti in 2. the place some mixture in the middle and make a samosa shape in which you place the layers on each othe and press the
eges together.

recently I tried this, i boiled ghoobi and added it to the mixture, it was a different taste but good.

enjoy with yoghurt or any other chutney.

here is another yummy and simple recipe.

I call it bread patties!

you may make it with chicken or aloo or both.

First boil aloo / boneless chicken or both sepreatly.

cut aloo in small pieces / shred chicken into small pieces.

Cut and add spring onion or normal ones, anar daana grind it first. green chilli pepper(cut into small pieces), daniya, zeera, salt, garam masala, red chilli powder (to your liking). (you may also chop and add a small tomato) mix all together with hands.

Take bread pieces, cut off the edges. take the obove mixture and press on one side of the bread. cut into two, so that u have triangle shape.

Coat into egg and fry in little bit oil till golden on both sides.

tastes goood with chutney or sweat sour sauce.

Here is how i make Beef patties (taste kinda like paki bakery ones)... learned it from my hubby's bhabhi. I am posting it in detail for amateurs (like I was once) but it is really easy and quick to follow…even a caveman can make it.:)

1 pack Pepperidge farm puff pastry sheet (or any other brand available at your local grocery store... make sure its the SHEET and not the SHELLS)
1 lb ground beef
1 tsp whole white cumin
salt to your taste
1/2 tsp each of ginger/garlic paste
2-3 medium onions
4-5 small green chillies
1/2-3/4 cup oil for frying onions
2-3 cups of water
1/2 tsp chaat masala

1 egg (beat it and add a pinch of yellow or red food color)
white flour- to dust your working surface

Method:
1. Boil ground beef in 2-3 cups of water along with whole cumin and ginger/garlic paste until it is well cooked.
2. Take the puff pastry pack out of the freezer and let it thaw at the room temp. i.e. on your kitchen counter. (45 minutes or so)
3. Heat oil in a pan/skillet. Fry onion till translucent or lightly browned.
4. Cut the green chillies in halves (lengthwise) and add it to the frying onion. Keep frying for the next 5-7 minutes.
5. Now add the boiled ground beef thingy in it and keep frying it on high flame until the onions are well mixed with the ground beef. Add salt as per your taste and chaat masala.

  1. Turn the heat off and let the stuff cool down to room temp.

To Fill the pastry:
1. Working on one sheet at a time. Unfold the sheet and cut it through the three folded lines (you will have three smaller rectangular sheets now)
2. Take one rectangular sheet and cut it into three equal squares.
3. Dust your working surface with a little flour and roll out each square into a slightly bigger square (4”)
4. Put the ground beef filling in the middle of the square.
5. Brush the sides of the square with the beaten egg and fold it into a triangle.
6. Also brush the top of the pastry triangle with the egg.
7. Preheat oven to 350 F while you fill the rest of the pastry sheets.
8. Line them up on a baking tray wrapped in aluminum foil/or brushed with some cooking oil or spray.
9. Put the tray on the oven rack making sure it is not too close to the heat source or it will burn from the bottom while being cooked on top.
10. Bake for 15-20 minutes or until done.

Now Eat!

bhaile puri papar with imlee ki chutney, dheniya dahi and aloo chana chaat - really tasty.

i dont have the exact recipe which i am trying to get from my dear friend:>
but this is a variation of that :)

ingredients

bhail puri and papar packets - 1 mixed rice puffed ones with fried dal mix including peanuts for added crunch

chunna chaat mix
chick peas or chunna (boiled) 1 cup
boiled potatoes - 3 medium & cut
chopped onions, tomatoes and green chillies
red chillie powder - 1 tsp
salt - 1 tsp

finely chopped fresh dheniya leaves - 1 bunch
low fat yogurt - 2 cups
(or dheniya leaves and yogurt puree)
imlee chuntney - home made1/2 cup ( as pour over dip)

in a flat dish spread bhail puri

in a mixing bowl, add chick peas boiled potatoes, greenchillies, tomatoes and onions together with salt and chili powder

in two separate bowls or dip dishes, pour imlee chutney and dheniya yogurt

for serving
take 3 tbsp of the bhaile puri and papar, spread over with chunna chaat & finally with dheniya yogurt and imlee chutney

Maize/Corn in Peanut sauce

You need:
4 maize/corn cobs cut into pieces
6-7 Large tomatoes blended
Finely Ground Peanuts 3-4 large tablespoons
Fresh grated coconut (optional) 1-2 tbsp
Chopped coriander leaves
Salt, turmeric, 2 tsp sugar, 1 tsp lemon juice, ground chillies and chillie powder.

Boil maize/corn pieces in salt water and turmeric until tender. Drain the maize pieces.

Heat oil in a saucepan and add finely ground peanuts and coconut (if using). Stir for few seconds and add blended tomatoes. Let the tomato/peanut paste cook covered on medium heat while adding spices to taste. When tomatoes cooked, add the boiled maize pieces. Simmer on low for 30 mins or so to let the flavour really seep in. Sauce should be abundant. Enjoy sprinkled with lots of coriander leaves and some grated coconut.

The best part of this dish is when you eat the maize and suck the cobs…there is still plenty of flavour there. I know not the best-mannered dish but worth it.

Oh and as a variation, you can use boiled baby potatoes instead of maize.

Also with chicken, instead of chaat masala you can use freshly ground white peppercorns.

Here is another recipe, a quick and easy one for Sweet Balls. got it from the Internet... made them yesterday with a slight variation and they turned out good.

3-1/2 cups White Flour
1/8 tsp salt
1 Tbsp baking powder
3 medium size eggs
3 Tbsp butter(i used 5-6 Tbsp cooking oil instead)
1 cup Sugar
3-4 Tbsp Sesame seed (you can skip it if you don't have it)
3-4 cups of oil for frying

Method:

  1. In a large bowl Mix together white flour, salt, and baking powder really well (you can use a sieve for a proper mix)
  2. add butter (oil), eggs, sugar, and sesame seeds. Mix again
  3. By adding a little water at a time knead it into a soft dough.
  4. Heat the oil in a deep frying pan.
  5. Roll the dough into small cherry size balls.
  6. Fry them on medium heat until they are golden in color.
  7. Take them out with a slotted spoon on a paper towel and, if you want, sprinkle them with a few sesame seeds or fine sugar.

Now Eat!

I used Daagh's recipe for Zinger burgers as a base and varied it so much that i dont feel i can rate the original recipe but here is what i did.

Chicken breasts made into keema
salt, pepper
vinegar about 2 tbsp for 1.5 cups of keema
national chapli kabab mix

I mixed all this up and marinated for a few hours.

Then in a bowl, mix 1 egg, 2 milk, 1 tbsp corn flour, 2 tbsp all purpose flour, salt, pepper and beat. Shape the keema into patties, dip into this mix and shallow fry.

We made sandwiches out of these and both my husband and I really enjoyed these. Since we usually have light iftars, this was a perfect dinner sandwich.

hmmmmm yup ppl call it sweet pakoras too, however, my sweet pakoras recipe is a completely different one... it's made of boiled mashed potatoes and wheat flour....ever heard of or tried it????

Here is the recipe for ground beef roll or samosa:

1 pack Spring Roll sheets
1-2 lbs ground Beef (again you can use chicken instead)
1 Tbsp Garlic Paste
1 Tbsp Whole white cumin
2-3 medium size onions
2-3 cups of oil for frying onion
1 Tbsp Crushed whole Chillies (skip or add less if you prefer mild)
1 Tbsp of Whole Coriander Seeds
1/2 Tbsp of Amchur Powder (Khattae/dried mango powder)(skip if you don't have it)
1 Tbsp of Dried Mint Leaves (or chopped fresh Mint)
Salt to your taste
Chaat Masala to your taste
Flour mixed with enough water to close the samosas or rolls.

Method:
1. Boil the ground beef in enough water along with whole white cumin and garlic paste....until it is completely cooked.
2. Take the spring roll sheets out of the freezer and thaw them over your kitchen counter.
3. Fry onions in oil till lightly brown
4. Roughly drain the fry onions out of the oil and add it to the ground beef thingy.
5. Add crushed red chillies, Chaat Masala, Salt, dried Mint (or chopped fresh Mint leaves), Amchur powder, coriander seeds (coarsely crush them under the palm of your hands or use a coffee grinder) and mix it really well.

Fill it in the spring roll sheets either in the roll or samosa shape. Deep Fry in enough oil at the medium-high heat till golden in color.

Another recipe is for Aloo Pakoray, really quick and easy and I believe most of the people already know how to make it:

2 Medium sized Potatoes
2 Cups Gram Flour (Besan)
1/2 tsp Red Chili Powder
1/2 tsp ground Cumin
1 pinch of baking soda
salt to your taste
1/2 tsp chaat masala
1 tsp ginger paste
oil for deep frying
1-2 cups of water

Method:
1. Peel and cut the potatoes into thin slices (with thin i mean thin thin)
2. Add red chilli powder, ground cumin, baking soda, salt, chaat masala, and ginger paste into the gram flour and mix well.
3. Add enough water in the gram flour mixture to make a slightly runny paste.(beat the mixture really well so that there are no lumps in the paste)
4. Heat the oil in a wok or deep frying pan.
5. Dip the potato slices in the gram flour mixture... coat it really well. shake to remove excess coating.
6. Deep fry in oil at a medium flame till golden brown in color.

Enjoy!

PS: you can also use spinach leaves or thin eggplant slices instead of potatoes or you can make all three of them to offer a variety at your iftar table!

How about serving a simple quesadilla for iftari..only instead of giving whole servings...slice it up and each person can take 1-2 slices so they wont overeat. :)
1 pack burrito size wraps
1 large tomato, diced
1 medium onion diced
chopped mint/coriander
1 lemon - juice of it
1 8 oz pack of cheddar or pepperjack cheese, shredded
butter
cooked diced chicken or steak
sauteed veggies of choice

combine lemon juice, mint, onions/tomato in a bowl.
heat up flat non stick pan, and rub a little butter.
Add Burrito wrap. sprinkle some cheese all over. on 1/2 half add tomato/onion mixture. Add meat or veggies. Cook until bottom is slightly brown and crisp
fold over to make quesadilla. Cut into sllices and serve hot with salsa/sour cream/avocado dip/hot sauce.
