Mexican Chicken Chimichange
Ingredients:
Canned Vegetarian Refried Beans – 2 / 16 Oz
Chicken – 2 cups Cooked / sliced into strips
Roti 10” – 2 each - cooked
Onion – 1 each medium / ¾ sliced & ¼ chopped fine for garnish
Fresh garlic paste – 1 tbls
Green chili – 4 each / 1- chopped fine for garnish
Cilantro chopped – 1 tbls
Red crushed pepper – 1 tbls & pinch for garnish
Salt – as need for taste
Oregano & crushed Cumin – 1 tsp each
Oil – 1 – Cup for frying
Butter & olive oil – 2 tbls each for cooking
Green coriander chutney – 4 tbls
Tomato – 1 each chopped for garnish
Steps to prepare:
Put 1 tablespoons of each olive oil and butter into a nonstick pan, add ginger/garlic paste and white onions & cook for a few minutes - do not let them brown,
Now add sliced chicken, 3 green chilies chopped, Oregano, Cumin and sauté until all is blended well. Salt to taste
In a separate pan, heat up 1 tablespoon of butter and olive oil, add both cans of refried beans and crushed pepper mix well and bring it to a boil, and keep it aside to cool, Salt to taste.
To put it altogether spread 2 tablespoons of refried beans to cover each of the Roti, divide half of chicken mixture onto each roti and fold it into rolls, set aside.
Put a cup of oil inti frying pan, heat up the oil at medium heat, fry both of the roti roll to golden brown, once brown and crispy, place the rolls onto paper towel to drain.
To plate heat up the remainder of the beans, divide onto 2 plates, slice the rolls diagonally, and stage the rolls vertically onto beans and garnish with green chutney, diced tomatoes, dice onions, cilantro and with crushed red peppers.

Had chicken biryani for dinner tonight served with riata, biryani masala, garlic naan and pan saute mango slices with achar
masala… simply delicious.

Actually, my uncles run a successful chain of restaurants in Montreal.. they make their own from scratch steak spice, which is delicious. Idk the recipe cos they send us huge jars lol but i've tried the McCormicks Montreal Steak spice snd it's pretty darn close. So i'd defo go for that

The recipe is really simple and comes together reallllyyt fast
10-12 large shrimp (or about 20 small)
4 Tbsp Thai green curry paste
2 Tbsp coconut oil
1 can of coconut milk, unsweetened
3 Tbsp soy sauce
4 bell peppers diced, assorted colors
1/2 Tbsp crushed red pepper flakes
Thai basil (regular if u can't find it)
One lime
A little less than 1/4 cup crushed or diced pineapple
Pinch of salt and black pepper
1 jalepeno sliced in circles
Saute the bell peppers in coconut oil for 2 mins, then add the shrimp and curry paste + pinch of salt and black pepper. Cook just until it turns pink then turn off the heat and set aside. In a saucepan, add the coconut milk and soy sauce and let comr to a boil. Once it does, lower the heat and let it simmer for 2-3 mins. Add the shrimp mixture in along with the jalepenos, and crushed red pepper flakes. Cook this for another 2 mins, turn off the heat and add the pineapple and basil. Serve with brown or white rice and lime wedges.

And some questions - how do u get the shrimp and salmon to cook together? I would assume the shrimp would cook faster. Or do u keep the salmon slightly raw at the center?
