For kheer I use something called “grødris” which is shortgrained rice (acc. to google it’s Japonica rice). It works like a charm. I’ve never made kheer with regular chawal.

In my experience firni is more likely to stick to the bottom then kheer 
. I guess it’s because I grind the pre-soaked rice first and then put it in milk.

I don’t care if this particular sheereenii is actually feereenii…firni sounds better. 
It’s like that one time someone told me haleem is actually dhaleem. After years of calling it the former, the latter just feels wrong.
