The main difference is that kheer uses whole rice grains and firni uses rice grains that are broken down or grounded up

Not to mention that you have to stand next to the firni and continuously stir it until it reaches the needed consistency without sticking to the bottom ![]()

We make kheer with broken rice grains (not liquified, but ground). And it’s still danedaar.

Par boil (al dente) 1 glass of rice
Heat 1 stick of butter with a couple of ilachis in another pot
Add 1 glass of sugar and heat through
Add 2 spoons of yogurt, stir then add rice
The rice will release liquid....dry it out and then you are ready for dum.
Add color/nuts/raisans/etc before you put the rice on dum (it depends on you what stuff you want to add, for freshness you can also squeeze some orange juice over the top)
Dum rice for ~20-25 minutes (on tawa--> low heat)
**If you want the classic yellow meethe chawal you add food coloring during the boiling part
And your done!

Firni is more grounded rice grains…you can’t see any single grains

Firni is indeed hard work
Ingerdients:
1: whole milk 1 1/2 litre
2: sugar 1 cup
3: rice 3 tbs (soak in 1/4 cup water for 20 minutes, and grind to paste)
4: milk 2 to 3 tbs
5: almonds 10 pieces sliced
6: pistachios 10 pieces sliced
7: green cardamom powder 1 Ts
Recipe:
1: in a large pan bring the milk to a boil on high flame, then reduce it to low to medium and cook for 20 to 25 minutes.
2: grind the rice with the water it was soaked in, if to thick then add a little milk to make it thin because if you add the thick paste to hot milk it will become lumpy.
3: then add the sugar, green cardamom powder mix well, make sure the sugar dissolves.
4: once the sugar dissolves then add the grinned rice paste in the hot milk, keep stirring as it tends to stick to the bottom and burn.
5: cook it on low to medium (or) low till the milk thickens.
6: once it gets thick add a few slices of almonds and pistachios, mix well.
7: dish it in a tray and garnish it with the remaining nuts, cool down and serve chilled :))
