I really suck at telling recipes but here goes ![]()
For Egg Fried Rice I use my own desi style recipe:
2 -2.5 cups rice
1 medium onion, finely chopped
A medium potatoe peeled and cubes in small pieces.
half a cup spring onions
3/4th of a cup, shredded carrots
half a cup of peas
2 teaspoons of whole cumin seeds
Chicken stock or chicken cubes for that chickeny flavor.
soya sauce (splash of it needed before putting the rice on damm)
Recipe:
(Clean the rice and soak them in water)
(Throw a beaten egg or two in the frying pan with a tiny amount of oil and some salt and just cooked them like an omelette. Cut the cooked egg in small pieces.)
- Fry the potatoes until they’re half cooked in a seperate pan with a lil oil. Set aside.
- Add oil in a pot and fry onions slightly so that they turn into a light golden brown color. Add cumin seeds while frying.
- After step 2, add 1 cup water and toss the peas in. Let the peas cook for about 10 mins so that they become soft.
- Add 1-1.5 cups of water/stock. In case of water, add the chicken cubes. Add salt according to taste. Bring to a boil and add the rice.
- When the water is almost dry, add the potatoes, spring onions, shredded carrots and the eggs. Splash some soya sauce. Then put on damm when water gets dry.
- TADA!! Rice are done after 10 mins of damm.

I like how you garnished the keema, Sara. It's a very pretty presentation; I'm stealing this idea from you.
