First of all, I always make fresh whipped cream, I posted the Cool Whip picture because that’s what most people use, but I am a huge advocate for making your own whipped cream!!!

So what I did was started with well chilled heavy cream..added 1 tsp vanilla essence and 2 tbsp sugar and beat it in my stand mixer (to get the best results for fresh whipped cream, always use cold cream, and put your mixing bowl and beaters in the freezer for a few minutes to make sure they are well chilled also)

After the cream is whipped, I folded in two packets of the pistachio pudding mix and mixed it well to make pistachio flavored whipped cream.

Take pound cake (either homemade or store bought) and cut it into tiny cubes. Put the cake pieces in the bottom of your shot glass or cup and spoon the crushed pineapple (with the juice) over it. Top with a good dollop of the pistachio whipped cream and sprinkled the sweet coconut shreds.

I then put them back in the fridge to “set up” and let the flavors meld.

It is sooo incredibly easy and such a crowd pleaser!

No recipe really…I just used thin sliced chicken breast that I had grilled before hand (seasoned with salt, pepper and garlic paste), I spread ciabatta bread with dijon mustard and a basil pesto…the sandwich is chicken, arugula, red onion and fresh mozerrella) After the sandwich is assembled, I brushed the top bread with a little olive oil and use my indoor grill/sandwich press to “grill it”

That’s it!

It’s Jell-O Instant Pudding mix…to make the pudding you add cold milk and mix, then set in the fridge, but in my recipe, you mix the dry powder straight into the whipped cream. I don’t know if there is a UK equivilent :hmmm:

I just did a quick google search, and you can buy through the UK Amazon site.

oh i love tuna kabaabs … my Bhabhijaan makes it at least once a month…did you use fresh tuna or canned ones?

Fresh tuna makes much better kababs, but I used canned cuz ain't nobody got time for gourmet cooking right now! It's finals week!

It was my first time making them, but they are easily adaptable.

If you're using fresh tuna, I would just bake it until it's barely done and then cool so that you can break it up. If you're using canned, make sure it's the high quality albacore kind and thoroughly drain the water from the can.

Bake the potato(es). I used 1 russet potato for 2 cans of tuna, but you can adjust the ratio to get more potato if you want. I just poked holes all over and microwaved the potato until tender, but you can also bake it in the oven or boil it. If you boil it, drain and dry out in a hot pan.

Once the fish & potato are cool, throw them in a bowl with finely minced green chilis, cilantro (the stems work well here), scallions, salt, red chili, & black pepper. Taste at this point to adjust for seasoning. For my 2 cans tuna + 1 potato, I only needed 1 egg to bind the mixture and 1 egg for dipping. To fry, dip in egg, then coated w/breadcrumbs and fried on medium heat 3-4 mins per side.

Thanks KKF, it's just a simple puffed roti that I flipped inside, added lettuce leaves, corn, some chicken and a mix of mayo-yogurt :)
