Khaosay is a Burmese dish. It's components are: noodles, coconut curry, meat, and then various toppings such as lemon/lime wedges, fried onions or potato matchsticks (basically something crispy & salty..I use fried tortilla strips) chili paste/chili oil, fried garlic, some people add boiled eggs as well. It's a popular dish in the Gujrati and Memon communities in Karachi.

There are many different versions of Khaosay…from my experience, Gujarati speaking families who actually lived in or near Burma before it became nationalized, have a slightly lighter version that is more coconut curry based, rather than heavy meat based, recipes from the Memon community. I prefer the lighter, coconut curry based ones, so I follow the recipe from my Gujju friend whose family lived in Burma:
Reha once posted a really good recipe for her family’s khaosay once…you can do a search and give the recipe to bhabi to make!

I believe Reha uses Dalda's recipe for khaose. And KKF, if you want mine, I'd be happy to pass it along. It was my first time making it myself, but it turned out great. I got it from a memon friend.
