Sure.

Peel and slice potatoes.
Preheat oven to 200 degrees C.
In a bowl, combine potatoes, olive oil, red chillies, salt and some dry herbs (I added dried green onions). Mix everything until well coated.
Brush a baking dish/tray with olive oil, and put potatoes in the dish.
Now bake them for 15-20 mins depending on ur oven.

Breakfast…granola, fresh fruit and yogurt :). Soooo gooood and so easy to make!

Yes yes, yummy sushi

Layer 1: empty a can of refried beans into a frying pan with 1-2 TBS oil. Mix taco seasoning packet into beans and let them fry until crusty and warmed through. Then layer them in the bottom of your dish.
Layer 2: Mash some avocados, add salt, finely chopped cilantro & onions/scallions (white & light green parts), & lots of lemon juice. You can add tomatoes to make it a guacamole but it wont last as long. Mix and layer on top of beans once beans have cooled down.
Layer 3: Sour cream. You can add anything to it- lime zest, chipotle seasoning, flavor it or keep plain.
Layer 4: spread thin layer of salsa of your choice. I used verde.
Layer 5: spread sharp cheddar cheese, monterrey jack, or any mexican flavored cheese.
Layer 6: Make pico de gallo (diced tomatoes, diced onions or dark green parts of scallions, cilantro, salt, & pepper. Layer on top of cheese.
Layer 7: finely diced jalapenos or olives

Here you go..

U can fill the chicken with anything you like.
The filling i used:
1 onion small-medium
1 tomato
2-3 cubes frozen spinach
1 tablespoon cooking cream
Salt and red chillies powder to taste

In one tablespoon oil, add chopped onions, cook until light pink, add tomato and spinach, cook for few mins.
Remove from heat and blend everything to have a smooth paste.
Put it back on stove, add one tablespoon cooking cream, salt and red chillies to taste, let it cook for few more mins when it will start bubbling remove from heat.

Preheat oven to 200 degree C.

Take 2 piece of chicken breast fillet, slice one piece in 2-3 layers (depending on how thick is ur fillet).
Put one pice at a time in between a plastic wrap, and beat with a meat hammer or something heavy for flatting the fillet more.
Spread one two tablespoon of the filling on the chicken fillet, and roll it.
Brush a baking dish with some olive oil, place all the chicken rolls in it (with the border side facing down) brush also the chicken top with olive oil.
When ur done rolling all the pieces, place the tray in the oven covered with foil for 15 mins.
Make a mixture of 1-2 tablespoon tomato paste/puree, pinch of salt, red chillies powder if u want spicy and 1 teaspoon dry green onions (optional).
After 15 mins remove the foil, and brush the top with tomato paste.
Bake for other 15 mins, until they are ready.
Remove from oven, slice before serving.
U can eat like this or serve with any type of rice, even plain white rice.
I had some biryani rice left from lunch so I used that.

PM, it says Spanish rice, there is no spinach in it. Spanish rice is cooked in garlic, onions, bell peppers, tomatoes, & cumin.

And todays lunch was…

My favourite Pakistani Steet Food…Bun Kebab! Okay I made them at home in England but still… Got two left for Husband would eat them too but he knows I’ve made them so may not be able to cover my tracks well.

Even managed to make that khatti/meeti burger sauce they drizzle on the burgers! I am awesome (I say that as I didn’t have a recipe for it was an experiment).

^kiya ye woh thailay walay hain?? OMG, Mere moonh me paani aageya... No restaurant can beat these street bun Kebab's taste and smell....... I love them sooooo much......!!
