Re: Aaj kya pakaaya/khaaya

Recipe please???

Re: Aaj kya pakaaya/khaaya

Sure, and do write me the recipe for these delicious qeema naan.......I believe we can stuff the naans with anything we like.. right? :)

Coated Fries:
(Recipe for 4 large potatoes, adjust the ratio of ingredients accordingly)

Take 4 large potatoes, peeled and cut into 1/4 by 1/4-inch thick batons
Wash them with cold water and leave them to dry well. (infact very well).
Now take a bowl, pour the fries in it, and add the following ingredients:

1 heaped table spoon gram flour
1 leveled table spoon corn flour
1 slightly heaped table spoon wheat (aata, normal that you cook your roti from)
1 pinch baking soda

(Never add salt, your oil will all go salty and you will not be able to reuse it).
Now cover the bowl tightly and shake the fries so that all the coating sticks to it evenly and properly.

deep fry them over the lower-medium heat first and then higher the heat when the fries are almost done.
Take them out, sprinkle the salt and any spices you want, serve.

Spicy Chicken Fillets:

1 Large Chicken Breat (cut into stripes).
Wash it well, drain all water, pour it in a bowl.

Add,
Salt to taste
Chinese salt 1/2 tsp
Garlic Paste 1/2 tsp
Vinegar 1 tsp
Tenderizer 1 tsp or Raw Papaya 1 tbsp
Black pepper, 1/2 tsp
red chilli powder leveled 1tsp
chilli sauce 1 tbsp
Red Color 1/4 tspn
Corn flour 1 to 2 tbsp

mix it well and leave the merination for appr. 2 hours.
Deep fry them on lower medium flame, the chicken should take not more than 5 to 7 minutes to be done.
Serve hot :)

Re: Aaj kya pakaaya/khaaya

Thanks queen!

I got the qeema naan recipe from Sheal on GS. This was my first attempt. Next time I will try my own stuffing. You can see her step-by-step instructions for how to stuff the dough here:
http://www.paklinks.com/gs/household-affairs-and-cuisine-corner/283802-aaj-kya-pakaaya-khaaya-60.html

Here is her recipe:

Naan
Ingredients:

All purpose flour (maida) ------------- 2.5 cup
Milk (luke warm) ----------------------- 5 tb sp
Yeast ------------------------------------- 1 tb sp
Sugar ------------------------------------- 1 tb sp
Salt --------------------------------------- 1 t sp
Baking powder ------------------------- 0.5 t sp
Egg --------------------------------------- 1
Oil ---------------------------------------- 5 tb sp
Yogurt ----------------------------------- 5 tb sp

Directions:

Add yeast and sugar in luke warm milk. Keep it a side for 12 to 15 minutes.

In flour add salt, baking powder, yogurt, egg (beat it well), oil and yeast milk mixture. Rub it well with your hands and make it into smooth, soft, and elastic dough. If you need more liquid you can use milk. Cover it with a damp cloth and leave it for about 2 - 3 hours in a warm place until the dough doubles in height.

Qeema for filling:

Ingredients:

Mince chicken ------------------------ 375 gm
tomato -------------------------------- 2 medium
onion ---------------------------------- 1 medium
garlic ginger paste ------------------ 2 tb sp
Green chili ---------------------------- 2
fresh coriander ---------------------- 1/4 bunch
crushed red chili --------------------- 1/2 t sp
salt ------------------------------------- to taste

Directions:

Finely chop the onions. Take oil in pan and let the onion fry until light golden. Add 2 table spoon of ginger garlic paste and fry it for 5 – 8 seconds and add qeema. Fry it for around 3 minutes on low flame and add finely chopped tomatoes. Cover it and cook it for some time. Now add green chili, fresh coriander, salt, crushed red chili. Cook it and make sure there is no water remaining in qeema.

Divide the dough in 4 equal parts. Take one piece fill it with qeema and make round shape with ur hand or u can use rolling pin. Lay these naans on baking tray. In a pre heated oven put this tray on the lowest shelf first for 2 minutes to cook the bottom part then move it to highest shelf for 3-5 mins (approx) take them out and brush with butter.

It doesn’t say in her recipe, but I cooked these with my oven on broil. I tried one on the tawa to see the difference, and although it can be done that way, I prefer the oven method.
