Desified lasagna (Chicken tikka and spinach/ricotta) … It was my first ever attempt at making lasagna and it was delicioso, if I may say so myself :blush: OMG boiling the lasagna noodles was a nightmare though! Some of them stuck together even though I took them out of the water straight away and laid them all out separately on a sheet of wax paper. I guess you have to boil a few at a time?

I’m the worst person to ask for recipes because I work by andaaza and hardly measure anything. :bummer:

But I’ll try my best… I used Khattichic’s recipe(post 17 here)](http://www.paklinks.com/gs/household-affairs-and-cuisine-corner/546725-meal-of-the-week-10th-16th-march-winner-announcement.html) but “desified” it a bit since I know my family wouldn’t have liked the traditional Italian lasagna, it would’ve been too plain for their liking.

Lasagna sauce:
I bought a big container (about 750 ml) of lasagna red sauce from the store and customized it as follows:

  • Put half of finely chopped onion into some oil and when it gets slightly pink, add in a tablespoon of ginger/garlic paste along with 3/4th tsp salt, cayenne pepper, basil, thyme and parsley. Then just mix in the store-bought lasagna sauce and simmer for 2 minutes and that’s it. You can make the lasagna sauce yourself at home but since this was my first attempt, I wanted to keep things as quick and simple as possible.

Spinach/Ricotta mixture:
500 g of ricotta cheese
About the same amount of frozen spinach - thaw it, drain it and slightly saute on a non-stick pan with very little oil, then let it cool.
Then just mix spinach and ricotta. Add salt, cayenne pepper, and black pepper to your taste along with a bit of thyme, parsley, basil (or any other Italian herb mix you have). Also add half a cup of Parmesan cheese, half a cup shredded Mozzarella cheese, 1 egg and mix everything well.

Chicken tikka
I didn’t make this myself. I used 4 medium pieces, diced finely. You can leave this out and make a spinach/ricotta lasagna only. But the tikka adds a lovely kick to the lasagna so buy like a starter portion from an Indian restaurant if you can and use that.

Lasagna noodles
I used about 18 I think. Boil 8-10 at a time to prevent them from sticking together. As soon as they’re soft enough, take them out of the water one by one and lay them all out straight on a sheet of wax/foil paper.

You can see the size of the pan I used. Cover the bottom of the pan with a bit of the lasagna sauce. Layer as follows:

1: Layer of lasagna noodles
2: Layer of spinach ricotta mixture
3: Spread the diced tikka pieces on top of that
4: Spread some lasagna sauce on top
5: Cover with a bit of mozzarella cheese

Repeat steps 1-5. This is the second layer.
For the final layer, leave out steps 2 and 3. So after the noodles, just spread the remaining lasagna sauce on top followed by mozzarella cheese and half a cup of Parmesan cheese.

Cover the pan with foil and bake for 30-40 minutes, until the cheese is melted and brown. I should’ve baked mine for longer but we were starving so… mhmm

Basically, look up any youtube video on how to make lasagna and then just customize it like I did. Simple.
