I used shan's Pilau biryani masala....out of all of them, this one is my fave (not spicy but still tastes good) but I used a totally different method.

I made it like I normally make biryani--make the masala, boil the rice, and then mix the two and put them on damm....that method has not failed me yet, so I did the same here...Basically I:
-Fried onions and garlic til it was golden
-Added the entire packet of masala (and then added a tsp or two of the regular biryani masala)
-Added the chicken, bhooned it... added 2-3 tbsp of yogurt.
-keep bhooning it... I've always had a problem with chicken, in that it leaves so much water, no matter how I make it...however this was the perfect consistency, not too dry and watery like I was afraid it would be! Basically I kept it on medium-high heat, and stirred every few minutes so that it didn't stick to the pan and get burnt. Also, unlike past times, I didn't add tomatoes this time, not sure if that contributed to the texture or not...
Meanwhile, boiled alot of water, with a pinch of salt, 2 kari patas and 2 black elaichis... added the rice (I didn't measure this), let it boil for about 10-12 minutes, when 3/4 done, drained it.. discarded the kari pata and elaichis (you don't have to do this, but my husband hates these thigns in his food, so I take it out). Layered the meat and rice, covered with a paper towel, left on really low heat for 20 minutes. added yellow food color and mixed.
My mother adds an extra step or two, in that she mixes powdered food color with milk and adds that to the rice, and her biryani si always a beautiful yellow/white color. I still haven't been able to do it like that.

Sara,my mom (and now me) add few saffron strands soaked in some milk for a couple of hours. it gives the beautiful yellow-orange colour and a zabardast aroma to biryani..BUT we ALWAYS make the hyderabadi ‘katchay’ gosht ki biryani ..the biryani that is made normally is what we call ‘fraud biryani’
if we ever make it in monthsss because it is simply extra masalay wala saalan mixed/layered with rice .. iss liay no one in our family considers it ‘asli’ biryani

we bring desi ghee as well from bombay every time we visit. At my mama’s place , its only him and he drinks a lot of milk. so there is plenty of fresh malai which he saves for us. So we make it ourselves and bring it Bahrain.
The desi/ homemade ghee ka khushboo is just divine !!! But use at your own risk. Hehehehehe… its all sitting on my hips now !!!
Do you guys use lahsun ki chutney as well. In gujjus its a staple item in all dishes and plus as a side. Its always there along with pickle and onion on the dinner table.
