Sure!

For the filling:
Shredded chicken breast (made according to your taste.......I seasonsed it with salt/black pepper/laal mirch)
Sliced green onions
chopped pickled jalapenos
cheese (I used a blend.....I think it was chedder and monterey jack)
Olives (optional)

Mix all of the ingredients (I don't have exact quantities I just eyeball it.....we like both green onions and jalapenos so I add a good amount of each)

I also buy canned enchilada sauce......I have heard they taste a lot better with your own homemade sauce, but haven't experimented with that yet.

You will also need white corn tortillas.

Method:
-Heat some oil until it is HOT and fry the tortialls a bit on each side (this is to soften them up). Also heat some sauce in another pan and once you have removed the excess oil, dip them in and out of the sauce and put the tortilla onto a plate. Fill the tortilla with the chicken mixture and roll. Before I add them into the casserole dish I line the bottom with some sauce, then add the enchiladas one by one and cover with sauce +cheese. Bake them in the oven for 15 minutes at 350 degrees.

Also if you don't want to fry the tortillas you don't have to. Instead, just place them on a griddle, heat them through and then dip them into the sauce.

Top with sour cream and enjoy!

during my trip to India, i had fresh green chane [holaa] kaa pulaao…believe me, it tasted gazillion times better than fresh hari matar kaa pulaao…i had both! :slight_smile: February is the season for both hara chana [holaa] and fresh green matar :slight_smile:
