Ingredients:
chicken breast ( boneless, skinless, cut into bite size cubes - I use two chicken breasts, depends on how much you want)
6-7 cloves of garlic, diced
one onion, diced
one stick of butter
Italian seasoning
salt/pepper
white pepper
shredded monterey jack cheese (amount depends on how cheesy you want your alfredo)
shredded Parmesan cheese (amount is same as above)
one package of fettucine pasta, boiled/cooked
2 cups of milk
1 cup of half and half
1/2 cup of sour cream
1/3 cup of flour
Take half of the stick of butter (save the rest for later) and melt it in a skillet. Take half of the diced garlic (save the rest for later), and cook it till fragrant...about 1-2 minutes. Add the chicken breast, Italian seasoning, salt and pepper. Cook the chicken until it's done. When done, take it out and place it aside. Take your milk and half and half and mix it together in a separate bowl (ease for later on).
Using the same skillet (to save messiness, or another one your choice)....melt the other half of the butter and add in the onion and left over garlic from earlier. Cook until the onion is transparent and starting to get golden on the edges. Add in the flour and continue stirring (keep the heat to about medium) and cook the flour out about 4-5 minutes, and keep stirring...you don't want burnt flour...you're simply trying to cook out the floury taste. Now lower the heat a bit more, and add the milk/half and half mixture slowly while continuously whisking it in. The roux will thicken eventually, add white pepper and salt to season it up. Once the roux is slightly thick...turn the heat off and start adding your cheese. Make sure to turn off the hat, otherwise the sauce will be gritty. Whisk together continuously until all the cheeses are melted. Now add in the chicken and fold in your fettuccine and voila - all done! =)

I got this recipe from the Foodilicious group on FB. After literally trying gzillion variations of the crispy chicken, I think I finally found the perfect one. :D. This was a bit spicy too (which was great), I think because of the use of chili garlic sauce.
* The recipe used whole chicken pieces, but I made with boneless breast.
Chicken whole cut: 1 kg without skin
Ingredients for marinating:
Salt:1 1/2 tbs or to taste
paprika powder:1/2tsp
red chilli powder:1 tsp
garlic powder:1ts
ginger powder:1tsp
White vinegar:2tbs
Meat tenderizer:1tsp
Method:
Marinate chicken with all above mentioned ingredients and leave for 4-5 hours at least, preferably for whole night.
For Coating;
Corn flour:3-4 tbs
Plain flour:3-4 tbsp
Baking powder:1tsp
Salt:1/4tsp
White Pepper Powder:1/2TSP
Mix all these dry ingredients and seasoned flour is ready to be used in coating.
Batter for coating:
Egg:1 large sized
corn flour:3-4 tbsp
plain flour:3-4 tbsp
chilli garlic sauce:2tbsp
Salt:1/2tsp
white pepper:1/2tsp
Chilled(very cold milk): as required to make a batter of normal consistency not very runny or not very thick and lumpy.
Method of Coating:
Dip chicken piece in batter made with milk then roll your chicken piece in dry flour(seasoned flour) very well. Coat chicken in flour so well that every part of chicken is covered with flour.
Now hold chicken piece in your hand and shake it to remove excess flour, after shaking excess flour out at this stage you will see the layers on chicken which will be more prominent after frying.
Do the same process with all pieces and fry them immediately, don’t leave them.
Deep fry chicken on medium heat for 10 -15 minutes or until crisp and golden. If you are using meat tenderizer then chicken should be cooked in ten to fifteen minute so dont over fry if you want your chicken to be juicy. YUMMY Crispy fried chicken is ready to serve..enjoy with fries..
TIP:
Dont touch chicken when in oil for at least first 10 minutes let it cook in oil.If you touch all the coating will be removed and it will not be as crispy as you want it to be..

Made macaroni, it doesn’t really have a name other than “keemay wali macaroni” or “soy sauce macaroni” cos I defo think it’s a secret family recipe cos I’ve never seen/heard of anyone making this lol.
