Question about the Chicken Chowmein…how much oil do you fry the chicken in? Deep fry, shallow fry or stir fry?

I use Bajia's recipe:
1. Make chicken broth by boiling chicken pieces [with bones] and some salt. Ajinomoto is optional...depending on how you feel about the research. I usually omit.
2. Whenthe chicken pieces are tender, I remove them from broth and shred them, throwing the bones away.
3. Meanwhile, you put the broth back on the stove and bring to a boil, add a can of creamed corn..or corn kernels that have been coarsely ground. Stir and simmer for a bit.
4. Then add cornstarch mixed with some cold water, add half a cup or so to thicken while stock is boiling.
5. Then beat an egg or two lightly, and pour over the soup stirring constantly to make threads of the egg.
6. Turn off when desired consistency is reached.
