For cupcakes:
1 cup all-purpose flour
3/4 cup sugar
1-1/2 tsp baking powder
Pinch of salt
3 tbsp unsalted butter
1/2 cup whole milk
1 egg
1/4 tsp pure vanilla extract
Beat everything (Except milk, vanilla, and egg) on a low speed unitl everything is combined. Gradually pour half the milk at this point until dissolved.
Now whisk vanilla+egg+remaining milk in a separate bowl for a few seconds and then pour into the flour mixture and beat on a medium speed for 2-3 minutes. Bake at 325 degrees for 20-25 mins or until golden.
For frosting
1 cup icing sugar
1/4 cup butter (softened)
1 teaspoon vanilla extract
1 ounce chocolate
Beat on a medium speed until light and fluffy (2-3 mins)
boil a packet of hakka noodles (available at any desi store) with salt and black pepper, drain and leave to the side...make sure ot rinse with cold water so that htey don't stick.
chop green onions (scallions) and mushrooms.
Slice carrots, bell peppers, and a red onion julienne style
heat up some oil and fry a little bit of chopped garlic...add half the green onions, bhoon...add mushrooms, bhoon a few more minutes then add the carrots, belll peppers and onions....add a little bit of soy sauce + vinegar + ketchup (1 tsp-1/2 tsp-1 tsp).....in the end add the rest of the green onion as a garnish.
put hte noodles back in teh pot and add the veggies. Sometimes I do it biryani-style, i.e., a layer of noodles, some veggies, mix, layer noodles ad veggies, and mix.
