i made ras malai yesterday too ,and they came baddddddi mean baddddd...they didn't rise...stay solid what did i do wrong...

i have always used alishat's recipe for rasmalai and it always turns out perfect! Ras malai is a regular in our home now...:)

I always had bad luck with Rasmalai until this one...keep trying..I don't know what goes wrong but before this attempt I was always trying almost the same way, only without condensed milk..My mother has been using the same recipe(sans cond. milk) for years and hers always turn out perfect. Try this recipe sometime, maybe it'll work.

Wow MM your ras malai looks amazin! I guess i'm gona make it soon ;) I made it once but it was a total failure lol the balls broke.. i guess i added baking powder more than it was required.

Thanks Namaan and Waleeja..Now that I rewind it in my mind something I did differently was not to knead the mixture too much, just left it when the mixture formed a ball. Also while making the small balls I remembered my mom never 'rolled' it between her palm(which I normally did), she just 'squeezed' it in one palm while shaping it with a finger of other hand, this way there aren't any cracks left which cause the balls to fall apart.
Maybe that was the deciding factor. I dunno, this is the first time they came right, maybe if they turn out well the next time I can say something for sure.
