thank you for liking it.
Pizza recipe: (2 large size pizza's ingredient)
Dough:
- 2 cup water
- 1-2 tsp sugar
- 2 tsp yeast
- 2 tsp salt
- 5 tbs olive oil
- 5 cups flour (2.5 maida, 2.5 aata)
toppings
- chicken (boiled in tandoori masala and minced)
-cheese (shredded)
-onion (rings)
-mushrooms (slices)
-bell pepper
-olives (black n green)
-tomato
-pickle
-oregeno
-pizza spices (basil + garlic salt + etc)
PAM to spray on the pan so the dough wont stick to the pan
recipe
in 2 cup mild water + 1-2 tsp sugar + 2 tsp yeast....and rest it for 20 min until all the yeast is not activated.
then in the same bowl, 2 tsp salt + 5 tbs olive oli + add 5 cups flour (2.5 maida + 2.5 aata) and rest it for around 30 min in a same bowl but in a humid environment (so i put it in the oven which was around 170 degrees...it makes the yeast ferment quickly, and raise the dough as welll).
mean while boil the chicken (use two chicken legs or wat everu wana use. its up to u), with salt n tandoori masala.
after is boiled and the entire water is evaporated...i add some BBQ spices with some hot sauce. to make it more spicy.
also chop onion in two rings, bell pepper, mushrooms, tomatoes, olives, pickles. and dont forget to shred the cheese.
for this specific pizza i didnt make any white sauce...otherwise u can also make that and put on top of the chicken. (if you need white sauce recipe do lemme know)
now take the pizza dough out of the oven, and divide into two piles. and role it and then put on the PAM-sprayed baking dish, or pizza slab...what ever is available for you.
now make holes with the fork on the dough, and add a pizza tomoto paste or ketchup or white sauce...watever is available or watever u want to put. i put ketchup.
and then spread around cheese, mushroom, tomato, bell pepper, olives and onion (put it in the end otherwise if they are under neath the pile of other things, they dont get dry, and instead they give out water and make it all watery).
and not put chicken and again put cheese...sprinkle it with oregeno and other dry pizza spices (like basil and garlic salt etc...i cant recall the name of all of em)
and put it in the oven around 375 degrees for 10-12 min.

Zobia Betty crocker premixed the ingredients for me :D. I just made the chocolate ganache with heavy cream an semi sweet chocolate chips.
Smaosa roti is pretty much similar to making regular dough. I use one cup media (high gluten all purpose flour), add about two table spoon oil and pinch of salt in it and knead the dough with some water. Let the dough rest covered with a moist kitchen towel for about hour or so and it will be ready to make samosay.
Same,for koftay I use 20/80 Qeema about 1 and 1/2 lb
1 onion, 5 cloves garlic, 3 green chillies, 2 table spoon mint and coriander leaves, ground coriander 2 tea spoons, salt and red chillies to taste.
Put every thing in chopper and pulse few times until every thing mix well together. Add yolk of an egg and make medium size koftay.
For gravey 2 onions diced , 2 table spoon ginger garlic paste, 4 tomatos finely diced, 1/4 cup yogurt, salt, red chillies, turmeric and garam masala to taste.
Heat oil in a wok and fry onions till golden brown. Then add ginger and garlic paste and fry add tomatos and all the spieces and bohanify it alot using a bit of water when needed. When the oil begins to seperate add yogrt and mix well. Add koftay after the oil seperates and lower the flame. Cver and let it steam, after a while add half a cup of water and shake the wok to move koftay. Do not use spoon or koftay will break. Cook while covered for 15 or 20 mins and when the salan is at your desired consistency remove from flame. Add chopped coriander and voila your koftay are ready.
Re: Aaj kya pakaaya/khaaya
you guys are lucky to have the time to cook all these delicious things.
Zobia, I’ve never heard of this, is it sweet or saltish? how do you make it?
