^^LOL Yes, my mom has to have national achaar with her khana..Urm, I am not really sure if gas stove is better on the pocket since we have always used an electric one...And I haven't seen anyone using gas stove in Canada...However, it's much common in US...

I did make a few amendments to the recipe for personal liking but the result was divine regardless…

I am a bit reluctant to eat raw eggs (I don’t eat mayonnise at all) even when they are grade-A eggs…That’s why I cooked egg yolks and eugar over a double boiler for about 8-10 minutes and then proceeded as required.

I omitted rum and used a bit of vanilla essence instead in mascarpone cheese mixture as well as in coffee

Didn’t have espresso on hand and I simply brewed 1 1/2 cup of strong instant coffee and used that.

I followed Chef Sanjeev Kapoor's recipe for Murgh Musallam...Unfortunately, the stupid website is down and that's why I am unable to post the link...Will do it later for sure...However, his website is www.sanjeevkapoor.com
You can go there and do a search if you want...It's got umpteenth recipes and by far, all of his recipes that I or or my mom have tried tasted absolutely awesome...
The recipe calls for boiled and mashed eggs to be stuffed in the cavity but I skipped that step...
I believe gas stoves are banned in Toronto at least, gas stoves are pretty common here though...

i have recently learned from mom how to make kashmiri chai.hubby loves it.
4 cups water+1 tbsp tea leaves+a piece of badaa khatai(flower like herb)+2 cardamoms-boil covered for 13-14 mins.add a cup of cold water&keep stirring-precisely "phaint-ing":D till it changes its colour from brown to reddish orange.add milk,preferably evaporated one to make it thicker cuz it doesn't require much milk.simmer for a few mins&serve with salt,sugar&pistachios

You can get the sabaz chai tea leaves here from desi stores, I am sure if we can get it here in the UK, you will be able to find it in Dubai.
