Steamed leg Roast..

Ingredients:

leg
Ginger garlic paste
white vinegar
salt, black pepper, black cumin
lemon juice
chatnii - Wash and put plums & dried pomegranate seeds in a saucepan. Add water. Bring to a boil. Cook for 10 mins. Smash with pestle..
yogurt
green paste (fresh coriander and green chili.)
cumin powder, garam masala, chinese salt

Method:

Combine chatnii, Ginger garlic paste, white vinegar, salt, and lemon juice. Rub the mixture into the leg pressing it deep into the cuts. keep aside for 2, 3 hours.

Beat yogurt until smooth & well blended. Add green paste, cumin powder, black cumin, garam masala, black pepper, salt, & chinese salt, mix well. Marinate leg for several hours or overnight in the refrigerator.

Fill the bottom of a large steamer with water, cover it and bring to the boil. Place the leg in the steamer, cover it and leave for 60-90 mins over a steady low simmer. The amount of time you cook it depends on how well you like it to cooked and the size of the leg. When the meat is ready remove it from the heat. To roast, place on a baking tray in the centre of a preheated oven at 200°C and cook the leg for 15 more mins. Then take it out.

Gajar ka Halwa..

Ingredients:

Grated Carrots
Milk
Sugar
condensed milk
Dry fruits (sliced almond and Pistachios.)
Khoya
Ghee

Method:

Put milk and grated carrots in a wok and bring it to boil. Cook over medium heat until all the milk gets dried up. Add sugar, cardamom powder, dry fruits and cook on slow fire till dry (for about 15 to 20 mins.)

Add condensed milk and cook for another 5 mins. Now Add ghee. Stir well and fry on low heat until ghee starts separating. Add khoya. Saute for a few mins. Decorate with remaining dry fruits and serve hot.

What is the best heat setting for frying the jamuns? Our stoves are electric and i am trying to figure out what it means when you say low heat. Mine either get browned very quickly OR the heat is so low, they take forever to brown and then get all crusty.
