Actually there's not much water..as binte wrote you need only a few spoons of water...the sugar will melt and will be enough syrupy to cover rice easily..

Hey guys if theres one thing i always mess up on is zarda :bummer:

the mistake i make is the rice end up either too hard or too fluffy, can someone please clarify and please don’t say “andase se” cause someone who messes it up all the time has no idea what “andasa” is.

Also can someone please tell me the how to make the rice all different colours cause i the few attempts iv had iv ended up with more white rice than any other colours.

Clothesmad it takes a bit of a practice to know just how much you need to boil the rice..did take me some time too.. the thing with sweet rice is that once rice are added to sugar they don't soften as much as they would normally in a dum. For Zarda I boil them a little more than half-done.

For more colored rice..use the base of a cup/glass/anything round and make slight depressions on top layer of boiled rice before putting it on dum.. spread different food colors in each circle with a spoon... be sure to cover the whole circle..then put rice on dum....this way when you mix rice in the end you'll see that colors will be distributed more evenly. hope it helps :)

erm so yeah … the zarda just looked like Zarda , didnt taste fantastic …but wasnt bad either:hinna: … he said “good try” …:naraz:

Now, my own take on it : Please bear in mind i havnt had zarda ever in my life , so i dont really know the actual taste of it , so correct me if i am wrong in assuming a few things :

1- Even though i put the zarda on dum for a good 20 minutes , I still felt that the sugar hadnt really absorbed really well into the rice … though husband felt they had , but I thought i could still feel the "boiled rice " Taste … I dunno if i am making any sense here :konfused:

2- The nuts used in the zarda, husband and me were bickering over pistachio.. I said no one puts pista is zarda .. he said how would you know you never had it :smack: … and please also clarify if walnuts can be added?

3- He poured some cream on the zarda and had it :smack: … and then was telling me that sometimes in pakistan ladies add cream to the zarda during the cooking process and that gives it a heavenly taste.. what was that all about??? :hmmm:

I’ve never used cream in Zarda although I love to put it on top of it when eating. I also love yogurt with zarda :yummy:

Hmm so the probs.. I don’t know why rice didn’t absorb the sweetness..never had this prob..was it sweet enough otherwise?

I put pistachios, almonds and cashew nuts along with coconut slices/dessicated cocunet in zarda ..I think it’s a personal choice no rule there.. I don’t like sultanas so don’t use it although many people do.. People also add chum chum/qalaqand and those red and green fruit muraba (dunno it’s english name).. You can make it as rich as you like but Binte’s recipe is the basics of it.

Yeah , I think its not the recipe thats the ultimate issue , maybe its practice , since i made it first time , I did come out acceptable , but a few more times practice will just give me an idea of the itsybitsy things :hmmm:

I still think Bint , your recipe was fantastic , coz i did get perfect colour and shakal of the zarda .. the taste was also great , say if i add some dry milk powder , like nido , two tablespoons after mixing the rice in the sugar … will it spoil the taste? usually i do this trick with the gajar halwa to get the khoya taste and it works well in it…

I thought my family were the only crazies out there - we love to pair plain yogurt with zarda - it is such a complementary flavour - it cuts the sweetness of the zarda without overpowering it - it’s the best combo out there! YUMMY!

As for the mithai in zarda - when we got the fancy route - you can put mini rasgullas in the zarda - that tastes really good.
