Do a search on this forum, there is a recipe of Zubaida tariq that works really well, i think Corrupt Angel posted it.

Here's Zubaida Tariq's Zarda recipe:

Ingredients:

Rice Saila 3 cups, soaked for 6-7 hours (these are the best but I don't have saila so I use Basmati rice)
Sugar 2 ½ cups ( can adjust it according to your taste)
Milk 1 cup
Cloves 4
Pistachios 10, peeled and finely chopped
Almonds 10, peeled and finely chopped
Cardamoms 6-8
Yellow food color ½ tsp (I use orange)
Colored ashrafies few, cut in twos
Ghee 1 cup (can use butter)
Water

Method:
Bring water to boil in a large pan, add drained rice, 2 cloves and 3 cardamoms. When rice is almost done, strain in a colander and leave in colander for a few minutes. Turn the rice out in a large open bowl.
Mix in the food color, milk, nuts, sugar and ashrafies. (I usually just boil milk in pan, add sugar and color and cook for a couple of minutes and then add rice and nuts and ghee at last). Heat oil in a large pan; add cardamom and cloves and rice. Stir with a wooden spoon, cover and cook on high heat for five minutes. Then put the pan on a tawa and put on heat.
Lower heat after a few minutes, leave till rice is done. Serve hot or cold.
Serves: 10

**waise umid hay yehi recipe chaiye ho gy apko aur haan main nuts use nahi ekrti ap ne dlana ho to baadam pista mewa{kishmish) daal sakti ahyn aise k badam bhigo ekr chilke utar lein

pista aur mewa jo hay woh pani main sirf mewa pani main bhigoyein k woh phool jayein then rice main dlaiye ga :)**

I am a zarda champion :snooty: was going to post the recipe but it’s almost the same as Bint-e-Adam so saved me trouble..I use 1 to 3/4 ratio of rice to sugar and add nuts and dessicated coconut at the dum point.. and I use desi ghee for making zarda..

I love zarda and have tried so many recipes but I just cant get it right...:(

Just remembered I use the ‘tar checking method’ for the syrup..it’s basically a check to see if rice are ready to be added to sugar syrup.. Do exactly as Binte wrote and when the sugar is dissolved, drop some syrup from the spoon.. if it drops in form of a single tar it means your syrup is ready.. otherwise cook some more..but just be careful not to overcook , we don’t want it to caramelize or to turn hard..

Masi :emmy: … ok tell me something … is it going to spoil the rice big time if i boil the water first , add the desired sugar and cardamom etc and all and then add rice to it?
