This is the plain one, U can add almonds pitachios or some mithahi stuff later
But Boil Rice with yellow color and a bit oil
when they are 3/4 done
in another pan make sheera with sugar and a bit water till it reaches saturation point. Also add alaichi
Mix and let them Damm
Add almonds afterwards
I used to make it a lot for my younger one almost weekly.She used tolove it.

ingredients

2 cups rice
1/2 cup oil
5 cardamoms
3 cup water
1 cup sugar
Edible food colors (orange, yellow, blue, pink & green)- mixed a pinch in a few drops of water, each.
Halved almonds
Desiccated coconut

Method
Soak rice in water for an hr.
In a deep cooking pot, warm up, oil, cardamoms and sugar and heat to a boil. After preparing the syrup, remove it into a cup. Pour the syrup in the 2 cups of remaining water. Add rice to this water and boil until water is ready to be drained and the rice are almost cooked. Add prepared edible colors – orange, yellow, blue, pink & green. Carefully pour edible colors on the rice, on separate patches. Lid and let the rice get steam cooked until moisture is gone. With spoon, turn rice over a couple of times so that they are mixed and look colorful.
In a clear dish, spread the meetheye rice and garnish with halved or slivered almonds and dessicated coconut.

dushwari, are u suppose to add water in the line above, cz otherwise sugar will caramelise...
and is the recipe for yellow zarda different from this or u jus add yellow food colour instead of all these.

To me sheera recipe is longer and more complicated.
So I go with the following. I can’t remember the exact ratios but will try.

1 cup rice

1 cup oil

1 1/2 to 2 cups sugar

3-4 different food colors

Handful of raisins, sliced coconut, almonds etc

Boil rice till a bit “kasar”. Meaning don’t boil it all the way.
Do layers of rice, sugar, oil, food colors, and the dry fruits. Keep on du’m
for a little bit. You will have to check and see when they are done.

That’s pretty much it. Now wasn’t that easy?
You have just made me crave zarda. Looks like I will have to make
some tomorrow and ruin my diet. :frowning:

What type of rice? Nobody mentioned that! They should be basmsati saila (easy cook basmati rice). It is better to soak them for about 4 hours in cold water.

The colour should be orange not the yellow one! They call it Zarday ka rang! It is made from fragrant flowers of "Har singhar"

The orange stigma is used to make the original "zarday ka rang"!

We have few trees of har singhar in our area.

The fragrance is awesome! From Dusk to Dawn! There is saying about them that snake likes the fragrance and lives on this tree!

lol... no it is not wired.. actually there was a time when I used to eat only khurchan and dried fruits/nuts from the zarda :D I think its been few years that I have started eating the actual zarda and not only khurchan lol
