Hi, please could you post your recipes for zarda. I’m interested to see how other people make zarda, and to give me some different ideas. I made it the other day and i used about 3 cups rice and 2 and a half cups sugar, but it was way too sweet. Also, are you supossed to make a sugar syrup separate then add to rice? I saw a recipe which Afia baji posted a while back, where she layers the rice, then sugar, etc then adds milk. Please share your recipes , thankz:)

yes why not shaztaf,i dont make sheera i boil rice with plenty of water and then drain it,then i heat oil and add caradamom seed,and few cloves fry for few min then i add the kishmish and fry for one min then off the flame and first layer it with rice than with suger and than shereded coconut,and and sliced almond than agin rice ,than suger and the nuts i used 1 full and 3/4 cup of suger for 2 cup rice,in the end i pour some lemon juice like 2tbs on it and 1/3 cup of milk on it.and put it on low flame covered with a tight lid,ohh when u boil rice u have to put some zerda colour or saffron colour in it and soak some zaffran strands in the hot milk and in the end add to the rice.
u can add some khoya to the rice in the end or some small gulabjamon tooo thats taste good.or decorate it with sliver leavs.

Afia baji posted a recipe a while back. We dont like our zarda or other desserts to be too sweet, so we use a ratio of 1 : 3/4 for rice: sugar.

I have only made it a couple times. Therefore not that good at it.
Ok the way I can remember it.
1- boil rice (not fully cooked)
2- layer rice sugar and raisins etc and I think oil
(or may be you put oil at the end and then mix it all)
3- let it da'm for a few minutes
And i think that's it!!!!
I forgot the sugar to rice ratio.
I belive it's one to one though.
Oh and add different colors during the layering process.
I am making it once I get some raisins and that
other rang baranga stuff.

another way you could use..
boil the water, add the food colouring, add the rice
drain the rice :p
add a wooden spoon full of ghee (i usually use crisco), let it melt, add sugar, tad bit of milk ...and mix it all together real good, until it's all liquidy
(all all them nuts and what not if you want)
and finally add the rice, mix it up ...be careful to mix very slowly, so that the rice don't break..
and stick it in the oven for daam

ps - i add equal amounts of sugar as to rice. so if i've put in 4 cups of rice, than i'll put 4 cups of sugar.

I made zarda 3 cups of rice and i put 2 and a half cups of sugar. It was sooooo sweet. Had to bin the whole lot:( . I think when i made the syrup i didn’t let the sugar dissolve fully, don’t know why it was too sweet, as everyone i know uses a 1:1 ratio of sugar and rice:confused:

Actually, i was wondering which is the best way to make zarda, (make the syrup separately , then add rice) method, or (layer rice in pan with sugar etc)
