Re: your pakora batter recipe

besan, salt, lal mirchi, haldi, a pinch of garlic powder and a baking powder..I like my pakoras fluffy and the baking powder acts as a leaving agent.

sometimes i’ll add finely diced onion, harri mirchi and hara dhanya if i’m not dipping in any other vegetable

…and sometimes I just use GITS pakora mix if I’m in a hurry

Re: your pakora batter recipe

Besan, red and green chillies, salt, fresh dhaniya or fresh spinach leaves.

And the besan must be added to the potatoes onions not the other way around

Re: your pakora batter recipe

For nice and crisp ones, add a spoon of rice flour and some preheated oil when making the batter. If you want it less oily, don’t use soda.

I marinate veged first like sliced onions, spinach, small finely choped potatoe pieces using salt, crushed red chillies, sabut dhania, grinded coriander, n sometimes anar dana too. these spices make veges watery n they dont taste bland, later besan according to taste. We like km besan walay type, not too thick coating one.

Re: your pakora batter recipe

mum secret recipe is to add anahar danna ..it makes the pakora more golden and taste really good.

Re: your pakora batter recipe

This is exactly how I make mine!

Besan, red chilli powder and red pepper flakes, zeera, crushed dhania seeds, dried methi leaves (sometimes), anar dana.

I like my pakoras nice n crispy…not bready/fluffy.

Re: your pakora batter recipe

I take diced/ sliced/ chopped veggies of my choice add a bit of yoghurt to it and then add gram flour, salt, chilli flakes, cumin powder, pomegranate seeds (dried), whole coriander and cumin seeds. Yoghurt helps them stay soft and nice. I try to add not much water and mix everything with yoghurt. Then leave it for a while so the veggies also give off moisture and I only add water close to frying time to fix the right consistency
