Your First Time....

No not that…cooking something and was it a disaster or you did well, so our communication is not so good and Safy is a health Nazi and if we run out of carrots or bananas he gets upset..we ran out and me and Mrs got a huge bag each…I hate wasting stuff so when mrs was out I decided to give gajjar ka Halwa a go, I love gajjar ka halwa but store bought ones are too oily and too sweet. I couldn’t put nuts in as Safy is allergic. To make it super nutritious and high protein for the athletes I loaded it with skim milk powder and instead of kohha I put ricotta cheese I used to think god gave me super big forearms to beat lil men but turns out they are meant to do the grating and bhoona and wash pandas…Mrs thinks it is superb.

I don’t remember my first time. I never liked cooking. It’s always been a chore. Gajar ka halwa is easy to make for me though . I let the food processor do the grating part and half the work is done.
PS: I make gajar ka halwa but I don’t eat it. Not my kinda dessert.

I normally dont cook desserts..although i was delighted with the big batch of Kofta I made this morning. Never could get them to taste as good as my wife but today for the first time I was pleased with them. Even lil Harris ate them and wasn’t looking for pasta. What kind of foods do you like.

last night I quietly asked her the recipe and voila this morning they turned perfect, sometimes they would be too soft and sometimes too hard but this time they were perfect. I made roux with besan and that gave the salan great texture, missed khashkhash we dont have that at home. Sent some for her sister and also halwa.

^How did you make roux with besan? Replaced flour with besan or some other alteration as well?

Just replaced flour with besan, just adding the roasted besan lends a besan taste ti salan but making a roux just thickened the gravy and did not alter the taste

This time I blended the red onions in the blender also, mixed some with the keema and fried some. That gives salan really smooth texture and I also used greek yogurt, that makes salan so creamy.

I was normally putting ginger garlic in the keema and wife told me not too. I like red onions. I had closer to 1.25kg keema. I blended 3 red onions, put half in the keema and saved half for salan. I blended minced onions in the keema, added green chutney that my wife made blending harra dhania, chilli powder, roasted jeera and garam massala powder, panko bread crumbs, I would say half cup, salt and kofta masala by shan and half cup greek yogurt oh my wife insisted I put one andda in also. I love the harra masala in my kofta. For salan I fried the minced onions, when the onions are almost browning I reduced heat and added besan and fried it like a roux, then added a paste of jeera, mirch, haldi, dhania and some kofta massala and roasted the massala added ginger garlic paste to roasting masala, then added one cup greek yougurt and fried the yougurt then added water and brought to a boil then I added the koftas to the liquid. I pick up the pot occasionally and move it in circular motion so the meat balls are cooking evenly. Cook high heat for 15 mins and then let simmer for half an hour. I didn't have khash khash or I would blend that with massala, also I would have used curry leaves and cardamoms but my wife doesnt like it..Kashmiri women are hard to please. My wife sometimes adds potatoes to the salan and if we have vistors she would also add boiled eggs, in a rich gravy boiled eggs are heavenly

Her and I just sat at the table and ate from the same bowl, she just raved about them..and she is the one who taught me how. She made my day and lil Harris ate spaghetti.

Last week I ran out of bread..then I go oh no!! what will I give safy for lunch, then I saw the naan so I made him naan panini..my first. I think it was a hit.

I don't cook often. But when I do, it turns out quite well Alhamdulillah.

Besides the basic things like Daal-Chaawal, etc. I have made Chicken Kofta, Chicken Karahi and Biryani in the past.
