Atheists have somehow decided that there is no God, or even if there is One, they are not interested in Him. Obviously, they would say that Science has nothing to do with religion, because to them religious understanding is primarily wrong. However, as Muslims, we don't see any reason why there should be a difference between scientific and religious knowledge, because, as a scholar has rightly pointed out, whereas science explores the Acts of God, the Qur'an is the Word of God and there can be no conflict between God's Words and His Deeds. Moreover, whenever a Muslim scientist will discover something new, or would realise the significance of something he already knows, he would spontaneously thank God Almighty for that; a secular scientist would probably exclaim: "How fascinating" or some other similarly absurd expression. He would probably ridicule the believer scientist for acknowledging God even in his scientific research. Since freedom is an essential element of the trial of this life, secular scientists, it seems, are going to exist side by side with believing ones. Not before the final day shall we be able to witness the secular absurdity assigned to the ignominy of extinction.

SCIENCE IS ELIMINATING MODELS OF GOD BUT NOT GOD
Francis Bacon, the famous philosopher, has rightly said that a little knowledge of science makes man an atheist, but an in-depth study of science makes him a believer in God. Scientists today are eliminating models of God, but they are not eliminating God. If you translate this into Arabic, it is La illaha illal la, There is no god, (god with a small ‘g’ that is fake god) but God (with a capital ‘G’).
Surah Fussilat:
"Soon We will show them our signs in the (farthest) regions (of the earth), and in their own souls, until it becomes manifest to them that this is the Truth. Is it not enough that thy Lord doth witness all things?"

If Islam disagrees with a scientific theory, then I would too. So I would trust what Islam says over any scientific theory.

For example, in Quran it says that "you do ifthar and niath-i-roza when white thread can be separated from dark thread". But there are places on planet where sun never sits and any person living in those places would have to fast forever. Does this mean prophet had no knowledge of earth's geography when he said the above words and had only the example of Arabia in mind?
Moreover, in science, unlike religion, there is no definiteness/absolutism. One thing may be right in one situation or frame of reference but wrong in another. For example, Quantum Mechanics doesn't invalidate Netonian Physics; it simply says that when objects become too small, their behavior cannot be explained by Newtonian physics. So, for common objects Newtonian Physics hold true. And for microscopic objects like atoms, electrons, etc. Quantum Mechanics is true. For cosmic objects(Very large objects), Einstine Physics is true. Each is true in its own frame of reference.
Every scientific postulate is a refinement over the previous one. Discovery of atom in itself is a great thing that only Science could accomplish.

It just so turns out that there is a hadith that people use to draw ijtihad from in order to determine the prayer and fast times for places like you mention.
Part of a very long hadith narrated by An-Nawwas ibn Sam'an:
We said: Allah's Apostle (peace_be_upon_him), how long will he stay on Earth? He said: For forty days, one day like a year, one day like a month, one day like a week, and the rest of the days will be like your days. We said: Allah's Apostle (peace_be_upon_him) will one day's prayer suffice for the prayers of the day equal to one year? Thereupon he said: No, but you must make an estimate of the time (and then observe prayer).
So this oddity is not made mention in the Qur'an explicitly. The question is why should it have to be?
Islam actually tells science what science should say. I have to go ... More clarification can be given if required ....

Secondly, Hadith is not the original source of theological inference or guidence. Quran has unequovcally mentioned iftar.
Thirdly, it is the same attitude as of clergy during Reniasance in Europe when they first resisted science, but when science became the predominent way of inquiry, they started claiming that what science says is already there in the Bible.
If what science has discovered or will discover is already there in Quran, then any Mullah Tullah should tell me from Quran right now what science has to discover in future.
In fact, religion doesn't answer the fundamental question..rather it reduces it to a yet a higher level of abstraction i.e. "God", "Allah", or "Khuda", etc.
