I brined the Turkey(soak it in salt and spice water overnight) and that made the turkey yummy beyond belief. Masala leg of lamb was fall of the bone and I also made greek lamb for the wimpy pallets, my nephews girl cant handle spices and also a couple of my kids.
Gigantic Shrimps, they are hard to come by. I got the 8-12 count. They turned out incredible with red, yellow peppers and onions in a spicy tangy tomatoes sauce.Most people do the cardinal sin of overcooking the shrimps.
Okay, going through this thread literally made my mouth start drooling and my stomach start grumbling and my skin turning green with envy. Y’all know how to cook and everything looks delish! It’s past midnight and I’m hungry now.
I was so proud of myself, we had leftover mashed potatoes from the Turkey Dinner and some bhunna keema in freezer. Rather than wasting stuff I mixed mashed potatoes with spices and keema and made battatas. Turned out delish. I also cooked pasandas.
Are we talking salan or bbq, with bbq I touch it with my finger and the firmness tells about the doneness, the firmer it is the more done it is. For roasts I time the beef and also like to insert a meat thermometer. With curries I like to brown the meat at high heat and then simmer at low heat, sometimes I cook curries in the oven. If I cook salan on stove I keep checking for doneness. Today I cooked pasandas in oven and they turned soft as butter.
For bbq it is important to let the meat sit out for an hour or so that it is at room temperature before grilling. After grilling it is important to tent it with foil and let it rest for a while before eating.

On my next day off I want to cook Badami chicken Qorma, so stay tuned for Friday. I cooked Nihari, we were supposed to take it for a potluck at these Indian peoples house but my wife decided to not go. I had told her from the beginning that I didn’t like Roniks parents but she never listens. Here I will post a pic from my previous cooking.
Good news is the youngest ate nihari, he thinks he is white and refuses desi food.
Looks really yummy, Chicken burger looks awesome. I cooked some Salmon Kebabs today. You could use that in burger also. I was reading we need minimum 2 servings of fish a week
You can do it so many ways, you can use mixture of daal and mashed potatoes for binder, this time I was in a real rush for work so I used the Panko bread crumbs, you should always carry that, it is so amazing. I like mine real spicy so I put lots of chili powder, lemon and cumin powder and chopped cilantro and lemon juice and salt and an egg in the mixture, if the mixture is too mushy add more breadcrums, I didnt brush with egg but some people do. Shallow fry it and don’t be in a hurry to flip or they will break. I used canned salmon, Sockeye is expensive I like Coho also or wild pacific salmon works too. Oh you can add green onions also. I did add some chopped onions too. If you brush with oil and egg then you can bake it also. Tomorrow I might grill some tandoori Salmon. You can also buy frozen Salmon burgers for more western style burgers but I didn’t care for them.
My wife doesn’t like eating meat anymore so I cooked Kadi, Pakoras and Daal Makhani. I gotta admit I feel so much more energetic today not eating meat.
