Definition of cheating will vary widely - depending on whether you are conservative, open minded, secure or insecure, or a plain swinger.
However IMO - In normal circumstances, once in a committed relationship, any emotional/intimate/physical interest in a member of the opposite sex (and in some cases, same sex) would qualify for cheating. My idea/guage is, dont poke where you wont like your partner to be poking.

We all know when we're doing something wrong...it feels wrong. There is a reason for that...its our own little warning bell that goes off when we're headed in a direction that isnt right.
Cheating isnt something that really needs to be defined, we're adults. Not children. We know when we're being unfaithful in the mind, heart or body.

So given the fundamental differences between men and women, would cheating have different limitations for them? Men are more prone to cheating physically, due to the lack of physical and emotional intimacy and what not. Women seek a shoulder to lean against, owing to similar reasons. So if a man cheats physically, or a woman gets emotionally intimate with someone else, would it be somewhat the same 'level' of cheating?

I think it's not the same, and a clearer definition is required. Cheating should be categorized on different levels of physical and emotional intimacy.
For (some)men physicality precedes emotionality. For women, emotionality precedes physicality. However, in each case, be it physical or emotional involvement, they could be at the same level in terms of cheating. You can not have a unifying scale for cheating, as to say that you must cross all levels of emotional intimacy to transcend into the lowest level of physicality or vice versa.
