You are not allowed to break their bones or do anything to them till the time that their body movement stops .. as long as they are still alive and twitching their muscles etc.. they should be left on their own in those last moments..
I remember the qasai who used to come to our house on bakra eid, after cutting the throat , the animal would be left alone, and the qasai would check after every few minutes to see if there is any Jaan in it.. water would be poured over its throat (I dont know the reason, maybe to ease the process of rooh nikalna). The skinning process would start only after it was completely still.
