Do you use the appropriate quantity of custard and milk? Do you add the custard powder into all the milk, or do you mix it with a little bit of milk first, and then add that mixture to the rest of the milk?
^ does this all make a difference?? didnt know that. shud v ideally mix it with milk before puttin in the pot? i also had the same prb yesterday.. i mixed the said no of spoons of custard with water and then put in the milk.. all at once but kept stirring.. wondr what i did wrong. it was thick and once it was chilled it was a bit patla... and shakin here and there rather than consistent!
I usually first boil milk to make it little thicker, can add half and half in it for better taste and more thickness, then I add lots of custard powder mixed in little extra milk.Remember one thing adding lots of custard powder alone can give you powdery flavour so might need to add some heavy cream, half n half or anything like that.
Make sure you bring the milk to another boil after adding the custard (mixed with cold milk) in it, that makes it nice and thick.
Don't take it off the heat unless the texture gets thicker.
^Actually, it won't thicken until you bring it to another boil..... so yeah, SoniaA is correct... when you increase the heat and keep stirring it brings it to another boil and the texture thickens.
oh thanks sonia and MIV.. but ill tell u something.. i made custard in an old pot(or shud i say it was non stick or of normal company... dunno the reason) and custard pot mein lag raha tha... and i didnt stir alot due to the fear that the black burning custard will come up so wot i was doin was using a whisk i was stirrin the custard but only opar opar se not andar daal daal ke.... i came to the conclusion maybe the quality brand of custard was bad??
