Re: Weight Watchers...

It was fun chat ladies. I think its a good idea if we know when we are meeting ahead of time. Maybe you guys knew.. I didn't. We should also talk about new recipes related to WW diet. Something we came up with that is low in points or from WW recipes.

I went grocery shopping yesterday.. and I saw WW everywhere. I am a fan of WW wheat bread because its so light. I also wanted to try their seedless rye bread, I think I'll get that next time. It looked good. I love their baked stuff... sometimes at my grocery store they sell it 2 for 5 and I make sure I get couple of those. My favorite is coffee cake. I got few frozen food. My son also likes this so I get couple of them that we share. Got some WW cheese. Also tons of fruits and vegetables. I want to try their ice creams too. I am not a huge fan of sweet stuff but now that its hot, I'll rather eat theirs then something unhealthy.

So how is your WW diet going?? Any sucess? I've lost couple of pounds and this time I want to be consistent with this diet... hopefully get some help and motivation from you ladies..

Garlic-Roasted Chicken with Gravy
serves 4 (¼ of chicken & ¼ cup of gravy)

1 whole, skinless chicken, insides discarded
1 lemon, halved
1 onion, halved
4 fresh rosemary sprigs
4 fresh thyme sprigs
6 garlic cloves, peeled
1 cup reduced-sodium chicken broth
2 tablespoons lemon juice
1 tablespoon cornstarch
¼ cup water
3 tablespoons dry white wine
1 shallot, finely chopped
¼ teaspoon dried sage
¼ teaspoon salt

1- Preheat oven to 400°F. Place rack in roasting
pan and spray with nonstick spray.
2- Rinse chicken inside and out under cold
running water. Pat dry with paper towels.
Place lemon, onion, rosemary sprigs, thyme
sprigs, and 5 of garlic cloves in body cavity.
Place chicken, breast side up, on prepared rack
in roasting pan. Tuck wings under and tie legs
together with kitchen string.
3- Roast chicken 30 minutes; pour broth and
lemon juice over chicken. Reduce oven temperature
to 325°F. Roast, basting, until instant-read
thermometer inserted into thigh (not
touching bone) registers 180°F, about 1 hour
longer. Transfer chicken to cutting board; let
stand 15 minutes.
4- Meanwhile, mince remaining garlic clove.
Pour pan juices into medium saucepan; skim
off any fat and transfer 1 tablespoon of pan
juices to small bowl. Add cornstarch to pan
juices in bowl, whisking until smooth.
5- Add water, wine, minced garlic, shallot,
sage, and salt to pan juices in saucepan; bring
to boil. Reduce heat and simmer 5 minutes.
Whisk in cornstarch mixture; cook, stirring
constantly, until gravy bubbles and thickens,
about 1 minute. Remove lemon, onion, and
herbs from cavity; discard. Carve chicken and
serve with gravy. Remove skin before eating.
