Actually its turks of central asia and afghanistan who introduced title of khan to india, they themselves borrowed it from those mongols who got assimilated with them in central asia. Many Afghans/pashtuns were nobles in the courts of turk sultans of delhi and later mughals so they also got titles of khan…

Why it became exclusive to pashtuns? because pashtuns were the most numerous settlers in india among all. Turks, mughals and iraninains were limited to cities while pashtuns settled in different parts of india as land-onwners/zaminder in rural areas.

After decline of mughal empire in 1707, mostly pashtuns migrated to india…They took advantage of weakened mughal empire and established their rule on various area most notably rohailkhand, farrukhabad, bhopal, tonk, jonagadh etc
