Type of cheeze to use in palak paneer or paneer biryani

hey guys, what type of cheese do you use when making palak paneer? I got mozzerella cheese the other day to make biryani based on recipe from geo tv’s farah (she used cottage cheese but I couldn’t fine cottage cheese in the market in uncurdled form) so I thought mozzerella will do fine but when trying to fry it in the frying pan it melts. I need some cheese that doesn’t melt. which one can I use? Thanks.

Try extra firm tofu . u can make paneer at home too but thts not as firm as a regular paneer but still decent for palak paneer.

yeh but that's tofu not paneer....in the recipe they say paneer. plus I see palak paneer in desi restaurant and it's not tofu in there...I'm trying to figure out what typa paneer is that and where to get it from....

Get paneer from an Indo-Pak store. A solid block of paneer, leave it out to defrost if frozen, then cut into cubes. Shallow fry a little before putting into the palak.

Or, you can make home made paneer by boiling a gallon of milk then adding 2-3 Tbs of vinegar. The cheese separates from the water. Drain the solids in a cheesecloth, squeeze out all excess water. Put a chopping board over the cheese in the cloth and a heavy weight pan over the board for a few hours. The cheese will them become firm and into a block shape.

Too much time and effort. Just get ready made paneer I tell ya.

Isn't paneer the same as cottage cheese? I made palak paneer sometime back with cottage cheese but I had the same problem..it just dissolved in palak completely,wasn't anything like the cubes they show on tv.

Cottage chesse is not really paneer, somewhat close. But paneer needs to be in solid form to stay in palak paneer.

You can make your own paneer at home, although its readily available in desi food stores in the freezer section.
Heres the recipe:

  1. Add food acid like lemon juice or vinegar to hot milk
  2. Separate the curds from the whey
  3. Drain the curds in a fine muslin cloth/cheese cloth
  4. Remove all excess water by pressing the curds
  5. remove the paneer from the muslin cloth and dip it in chilled water for at least 2-3 hours
  6. Remove from water and use as required

but wud it be in proper and genuine cubical shape?

its easy to shape...maybe if you had a form of some sort..like you can use ice cube trays. But its really easy to mold into whatever shape you want.

To make palak paneer do you just make palak as usual and then add in the paneer cubes after a light fry

yeah ..but i do add some dahi and some milk in my palak..it gives it a very good taste..fry paneer pieces and put them in cold water..this prevents them from breaking ....then add in palak...

using nanak paneer in palak was the worst thing I ever did to spinach…nanak paneer is this really really really heavy sweetish lump that totally ruins spinach. it’s so heavy that after eating my stomach was heavy with heaviness for next two days. I couldn’t even eff’ing take a dump as bowls refused to lift the weight for a single second. who uses this $hit?

I brought some tofu over the weekend to subtitute in spinach. hopefully it won’t turn out to be as terrible as nanak-friggin’-paneer. :mad:
