This is Giada de Laurentiis' Recipe

EGG YOLKS, 6
SUGAR, 3 tbs
MASCARPONE CHEESE, 1 lb.
STRONG ESPRESSO, 1-1/2 cups cooled
DARK RUM, 2 tsp
LADYFINGERS, 24 (packaged)

In a large bowl, using an electric mixer with whisk attachment, beat egg yolks and sugar until thick and pale, about 5 minutes.
Add mascarpone cheese and beat until smooth.
Add 1 tablespoon of espresso and mix until thoroughly combined.
In a small shallow dish, add remaining espresso and rum.
Dip each ladyfinger into espresso for only 5 seconds. Letting the ladyfingers soak too long will cause them to fall apart.
Place the soaked ladyfinger on the bottom of a 13 by 9 inch baking dish, breaking them in half if necessary in order to fit the bottom.
Spread 1/2 of the mascarpone mixture evenly over the ladyfingers.
Arrange another layer of soaked ladyfingers and top with remaining mascarpone mixture.
Cover Tiramisu with plastic wrap and refrigerate for at least 2 hours, up to 8 hours.

I don't use rum at all or any kind of alcohol. It turns out great. Some people subsutitute mascorpone for cream cheese but its really teh mascarpone that brings out the flavor. Mascarpone is a bit hard to find so you may have to look in more than one grocery stores, but its worth it.

Also another important thing is the raw egg yolks most tiramisu recipes call for. It can be dangerous to your helath esp if childern are to be consuming it. If you wish to use cooked egg yolks, here's how, boil a pan of water on teh stove and take another pan and place the egg yolks in it and place the other pan on top of the pan with the boiling water, hence creating a double boiler! Stir constantly for 8 minutes! Add the egg yolks and sugar to the mascorpone cheese baet and procced as usual.

Oh yes, espresso or coffee is great to soak teh lady fingers in. You can use sponge cake if you can't find lady fingers (which you should as its holiday season) but ladyfingers really looks different and intresting.

should i make coffee using instant coffee and then soak the sponge/lady fingers in that?

Wow tht is complicated! I usually just buy the Salmonella free egg yolks. U can get them in most big supermarkeds.. look around!

Are you based in the Uk? I didn't see any in the US. It really isn't too hard tomake it the way I described though!!

Dark rum is just for rum flavoring, you can use vanilla extract instead or any other flavor extract...

you can get em. davidsons makes em, i have jd no problems finding them

lusi, i found out vanilla essence and vanilla extract have alcohol! man, am i bummed- i don’t know if it burns off entirely or what. anyone have any ideas?

buying a vanilla pod is sooo pricey! its like $2% for 1 pod at Williams-Sonoma. but i guess i should just make some vanilla sugar with it and start using that.
OR, i could see what they have in dubai and bring back caseloads of it.

Hmm... I had always thought that the extract is not alcaholic and essance is alcaholic. Vanilla sugar is easy to make, I guess all you have to do is leave the vanilla pod in the sugar jar...

I don’t put vanilla essence in Tiramisu.However, for vanilla essence I just get it either fromthe desi store which is sans vanilla or imitation vanilla essence fromthe regular grovery store. The vanilla pod can be found at regular grocery stores too. I bought it last week to make fruit compote in vanilla syrup (turned out good by teh way) and bought the vanilla pod at the grocery store. You may have to ask customer services where they keep it as its usually kept tucked away somewhere. Willimas Sonoma is pricey.

lusi, extract and essence both have alcomahol in them.
