The fice-pointed star and crescent appeared on mosques and other sunni muslim structures after 1451AD. The star and crescent was used as a war banner by the Uthmani family that claimed Khilaafat in 1451.
After Mehmed II became Khalif, across the Sunni world outside of uthmani control, a common way for the local rulers and population to publically indicate their loyalty to the Khalif was to include his family's symbol on their own flags and buildings.
That is why you only see the 5-pointed star and crescent in Sunni majority countries.
