Re: the ultimate BIRYANI thread
Chicken: Fry onions til golden, add GG paste and bhoon til smell goes. Add cinnamon stick, choti elaichi, black peppercorns - bhoon til you smell the spices. Add chicken and bhoon til colour changes. Add masalay: red chilli powder, haldi, salt, dhania powder, zeera powder. Mix. Add tomato (paste or real), yoghurt, and imlee (not chutney - the one with stones). Slit green chillis, add and mix. Cook until water from yoghurt has gone dry and formed a paste.
Cook chawal until 75% done (equal cups chawal and water usually works for me). Take out of pan and layer rice and chicken mix alternately. In each layer add chopped fresh dhania, fried onions, and sprinkle kewda water mixed with yellow food colour. Finish with a layer of white chawal and put on a low heat on the chula for about 15-20 mins or until the chawal are done.
Re: the ultimate BIRYANI thread
I once ate biryani wth boiled eggs in it, it was tasty.
wht I do prepare masla, and boil rice separately, and cut potato in cubes apply turmeric powder fry them till their crust is golden and then give layers, rice then masla then potato the rice masla and potato at top rice then sprinkle fried onions mint and coriander
I second the Shab e Hijar recipe that CB is talking abt…it is absolutely delicious, and super-easy to make! I think it was posted in the biryani competion thread or something.
