The making of haleem

Ok, so I found this one big packet of some shan masala type brand that includes the masala and the gandam (wheat) and daaleiN (lentils) etc in it. From what I can gather, I’d need now some meat and follow the directions written on the packet.

What I’m not sure of is to mix/scramble the haleem afterwards. I don’t want to use the blender as it sounds like a messy solution. I do have, however, hand chopper that I use when I cook spinach to blend it. I’m not sure if it can be used for haleem though. Any ideas? Just don’t make me buy some electric home appliance. Gimme suggestion based on what could be found within the household.

The blender solution is not messy. Just make sure not to blend all of the haleem, only about two thirds of it. Otherwise it'll be like soup.

Roman, I've used the same SHan packet a couple of times and got tasty results. I used pressure cooker to cut down on cooking time. In their box recipie, they ask you to add water to the daal/gandam/meat mix and cook it for several hours. You can replace that step with a pressure cooker. Just add enough water to double the level and pressure cook for 15 minutes. Then release the pressure and do the traditional GHOTNA for half an hour. Lazeez haleem should be ready in less than an hour. No chpper/blender for me. It's a pain in the lower rear to clean it.

I guess a hand chopper would be fine too. When I use a hand chopper to mix the masala in handi it works just fine, only the sprinkles can ruin your cloths ... so do wear a apron.

Rom. Haleem is not something you make at home. There are restaurants that make it for you. Tomorrow you may want to make Baryani and other complicated dishes. Some culinary delights are better left to professionals. Stick to your Aaloo Keema.

I find Biryani to be the easiest thing to make at home Shan ki tau baat he kuch aur hay). it is easier than making aaloo qeema. Qeemay kau tau dhona he aik azaab hay.

Waisay, this fairer sex part has some truth. Last time I was in Pakistan, I made Biryani on the occasion of having my brother-in-laws friend and his family over. They have had us over quite few times with BBQ treats that we thought we return the favor while I was still there.

It just so happen that another family, "happened to be in the neighborhood" and stopped by. So they joined us over the biryani and liked it very much. I later learned that they were over to "check" me out for their daughter. I'm sure briyani played a big part in their liking of me otherwise they didn't seem to be too amused by hearing my views on "Muslim Ummah".

kasam se, u are so right :smack: do u really clean the the meat after its queema ? my ammi says you don’t have to, but the blood remains if you don’t.

I don't know if many people rinse qeema. Actually, most of the people I know don't. I dont' think it's makes any difference if you don't. It's all perception.

I dont know about kosher wosher but I have a habbit of washing everything with running water before adding it to the pot. I used to wash qeema in those jaali wala burtan (stainer) but two things would happen. A lot of qeema would escape the strainer and end up in my sink which had to be thrown away and the other mess was to clean the frikkin strainer afterwards. Now I just place qeema in a bowl and let it sit in cold water for a minute and then drain it with one hand stopping the qeema from dropping into the sink. It's a pain.

Yes, funguy's got it. Do ghotna. Sit on the floor, chaunkri maar ke , and place the pateeli b/w your feet to secure. Take the ghotna and put it in the pateeli and go round and round and round and round. I have never tried it though, but have seen people using this method back home.

OR you can use the hand blender and give it a couple of rounds, then mix with spatula, and then blend again a couple of times and mix again till you reach the desired consistency. Point being, don't over do it cuz as Muzna said, it looks like soup.

Actually thats where your friends come into the picture. Call them in for an evening of ghotna. If they claim to be pre-occupied on account of some business meeting or soccer practice, you'd instantly know who is paying for the drinks during your next rendezvous.
