I went on a low carb diet and lost a stone in about a month, but the great thing is despite I'm eating carbs again albeit fewer of them, my weight has remained steady. The idea was to re-introduce carbs 1 at a time, and monitor how it affects you. I know white bread is evil for me, but white rice not so bad
It's similar to South Beach I guess.
When I was doing P1 of my diet I was eating eggs for breakfast everyday (and still do - but I like eggs, so no issue for me).
Lunch was:
salad with some kind of protein, i.e. seekh kebabs, tandoori chicken, etc, or
warming homemade soup, or
fritatta/spanish omlette's with salad
Dinner was a bit harder without Roti or rice, but not impossible. Here's some ideas:
faux' cauliflower rice i.e grated cauliflower either heated in a microwave, or stirfried with some masala. It doesn't taste like rice but does give you something to eat salan with and stops you feeling like you're missing out.
Or a cauliflower or celeriac mash - again taste's good with a curry on top.
Keema, I stuffed either a courgette or pepper with it, so I had something with more substance
A lot of kebabs/grilled chicken/tikka/tandoori chicken with salad
Celeriac chips - instead of potato chips/fries
Stirfries minus the noodles - or with shredded cabbage or beansprouts instead
Bowlfuls of daal - yum. But be careful as lentils can be quite carby, so monitor how it affects your weight.
Snacks were often:
Cheese
Nuts (no salt) -- be careful how much you consume
Prawns with a dip
Guacamole with cucumber or something
The thing with a low carb diet is you do need to eat fat, so low-fat food doesn't work.
