What do you do to kill it? Bhoonofy with ginger garlic paste should do it, but I was wondering if someone could share their tips. The smell is so off putting for me. And sometimes it just wont go away, no matter how much I try.

wash meat with vinegar or marinate for sometime with white vinegar after washing with water....u can also use ajwain to kill smell....

The vinegar is the best idea. I always do it when I'm making ground beef into something - the smell whilst cooking is def. off-putting, and a dash of vinegar in it kills it.

^ I think every meat has a certain smell of its own. Chicken has it the mildest and so isn't really noticeable. Beef also doesn't have that loud a smell too. Its basically fish and mutton. But well that's true sometimes there is a smell and sometimes there isn't. And then there are certain methods to ward off the smell too. Thanks to the culinary skills.

But are you sure it wouldn't rather harden the meat? I have a feeling if I put the vinegar before the meat is tender, it might stiffen or harden the meat? vinegar being sour. They say something about not adding any sour element into meat before it is tender as sourness will stiffen it.

It is the animal and origin of it . Some goat or cow will not have any of that smell known as heek in Urdu, some will have it. Make sure you buy meat from some butcher or store which knows their meat and do not store and sell inferior quality meat. Goat and cow meat has to be of young animal and should be pink in color not red or very dark . If it is red or red then it will have that smell.
In that case your best bet is to make qorma , karahi gosht or achar gosht out of that meat.
It is all from the experience handed down from generation to generation.

It's such a dash though, I think washing the meat in vinegar would be more detrimental. By dash I mean like 1/2 tablespoon. And I've tried it before and the meat hasn't ended up tough.
Like other people have posted, different meats will have different scents. If it's really really strong and bothering you, then the meat's probably bad. But if it has a slight gamey smell, then it's just a sign that it's fresh and good.

fish/seafood only smells “fishy” what it is not fresh or of good quality!!! Pristine seafood will never have an offensive odor…learned that from food network ![]()

I think that meat of the animal from the colder regions - because the animal has a thicker layer of fat - has a smell to it. I've noticed the difference in lamb meat if you buy it from the northern parts of US vs lets say from Texas.
