Summer BBQs!!!!!!!!!!!!!!!!!!

Okay, so my favorite thing to do in the summer is have a BIG BLOWOUT BBQ!

This time around though, I want to be creative with my meats and veggies.

Please post your special BBQing tips and recipes you know of that give chicken/steak/burgers/shrimp that extra special KICK!

Marinades, tricks for more moisture, etc.

Try adding cajun spices to your miranade. It gives it that extra kick!

Try couscous salad as an accompaniment for bbq items. I love it. Or a home made vinegrette dressing with salad greens, sunflower seeds, dried cranberries and sliced almonds/walnuts for the extra crunch, yummmm.

Not today but Im planning my BBQ for a weekend coming up! A couple of big ones every year are a must for me!

Ira, have you ever tried cous cous salad on top of spinach? It is SOOOO GOOD!

Try spinach, mushrooms, black olives, sunflower seeds, some cheddar cheese and cous cous salad on top. My favorite salad...you dont even need dressing but if you must try a raspberry vinegrette. To die for!

We had a massive one last weekend for offspring no.2's birthday.

Here's my recipe for lamb chops....
Lamb chops
yoghurt
salt
garlic
black pepper or chilli powder
......marinade overnight and griil over barbeque while basting....easy peasy,but sooo delish.

Ps.can someone tell me why my kebabs keep falling off the skewers.I have tried EVERYTHING...

After reading the Buttermilk thread…Im curious…should we marinate BBQ chicken/meat in buttermilk too? What exactly would it do? :hmmm:

oh yea, i want to know that do u grill the oil first so meat doesn't stick to it

my kebabs fall off too so I wrap thread around the kebabs so they dont fall off.

What does a typical BBQ menu consist of for you guys?

Mine is:

Chicken
Burgers
Hotdogs
Thin steaks
BBQ’d potatoes
Tikkas on skewers
Corn
Shrimp
Salad

I cant remember more…:bummer:

My barbeque consista of:

Tandoori chickens (1/4'd)
Lamb chops
Seekh kebabs (when I can be bothered)
sometimes fish
burgers
corn
baked potatoes
salads
coleslaw

The sun is shining today...am tempted to have a small one today :)

yeah ordinary thread.

charcoal grill is an art so avoid it and go with the gas grill, preheat the grill to 400 and then lower the heat, place the tikka, close the dome and resist the temptation to open the lid or flip the tikka for 6-7 minutes. Flip and grill for another 4-5 mins and then turn the grill off but let the tikka sit for another 2-3 mins.

Oh and always use leg and thigh piece combined. Drumsticks are good for frying maybe but not for grilling.
