well about baingan bharta, i roast whole eggplants directly on the stove flame...cool to touch and then peel the skin and chop the flesh...mix in it little bit of chopped onion, tomato, green chillies, bhuna zeera, chopped dhaniya, salt and yougurt and mix well...
about daal, I prepared it for dinner for family...so what i did was that a boiled daal (mixture of daals and spices), prepared tarka in a pan...pour 2 servings worth of daal in a big bowl, baghaar rest of the daal, and then pour a litlle bit of my daal into the baghar pan and stir to get the leftover flavors of the baghar and then pour daal back with rest of MY daal...in this way, I get the flavors of tarka without the extra oil...
