This is the typical Biryani i make. I like its taste but its very normal .. nothing special sort. I’d love it if it could taste yummier & better & different. What can be added at which stage to make it spicier and unique?

I dont take all the brown’d onions out , I left half in and take half out for putting it over the top , while putting it on the Daam ..
I keep my tomatoes wait for a while , and did the bhooning of chicken , with Garlic and ginger paste first .. Then I add some yogurt , to me Tomatoes should be added once you got something like a curry in place
And in last I do the garnish with left crispy onions , DhaNiyaa !

You can try the hyderabadi style of cooking, which will give an entirely new texture to your chicken and rice. I think its called ‘dum ki biryani’, and kachay gosht ki biryani. Im sure the recipe is listed here on this forum somewhere.

I have found adding fresh cilantro and mint leaves at the dumm stage gives a very nice aroma.
Also I add whole garam masalas (cloves/green cardamom/black cardamom/cinnamon sticks/peppercorns/staranise) and chopped ginger and garlic while boiling the rice.Makes a lot of difference.Try it if you haven’t done it before…

^^ I wash the rice, then saute it in a little ghee with bay leaves, cloves, cinnamon and peppercorns. Gives it a wonderful aroma, and the added ghee makes the rices grains look shiny

I make 2 sorts of biriyani, chicken and mix veg version and also my signature biriyani which is sindhi biriyani and it’s lovely.
I add dried prunes to the lab at the time of bhooning and it gives the biriyani a nice tangy taste, also add a little lemon juice to the rice when you boil it to complement the tangy flavour. Using lot’s of whole spices give gorgeous aroma.

when i was in college me and my friend used to eat student biryani from Burns Road.
One of my indian hyderabadi friend also took me some hyderabadi restaurant and there i ate hyderabdi biryani. i m not big fan of it. I like bighar e began.
years ago i ate fish biryani at my relative home.
you missed chicken biryani and goat biryani. I like both of them too.
