Mace/nutmeg is not added for any kind of taste it is added for aroma. Aroma only cannot make a biryani tasty you need some tasty ingredients too.

Well alot of our taste is actually as a result of smell.

Like when you have a blocked nose you cant actually taste very well?

i get such blocked noce atleast once a year and i cannt smell anything....

I like it chock-full of little pockets of masala...that's what I think makes it yummy. I don't care for a dry biryani.

You need to add aromatics like nutmeg/ maze/star anise to give it biryani wali kushboo. Add a layer of fried onion and tomatoes. Add green dahniya, podina, and green chillies in between layers. Don't forget to squeeze fresh lemon in between layers of biryani. Saffron also add wonderful aroma, color and hint of taste.
Now I want a plate of gram gram chicken biryani.

this is how i make mine

i fry chopped onions to golden brown, add garlic/ginger paste, the ghost/chicken, then i beat yoghurt in a cup with a fork mix Sindhi biryani masala to it, add it to cooking pan, then add green chillies, cardamons, cinnamon sticks, bay leaves, plums or dried prunes( soaked in water). Towards the end i add tarmarind paste to the gravy. once done, i set it aside.
I add lemon water and salt to my boiling rice. After boiling rice and drying them. i cut onion rings, fry them and set aside. take 2-3 long, sleek green chillies, fry them and set aside. then i fry cashews and once they r light golden set them aside. Now i cut large, round tomatoes and chop some cilantro and set aside. After this i layer my biryani and top it with all the fried and cut herbs plus garnish with 2-3 mint leaves at the very top. After this i put some zarda colour to a tsp and keep poking it in the rice at diff spots. At the very last i fill quarter cup with rose water, add some regular water to it and sprinkle it over the biryani. right after i cover the lid and put the pan in the oven.

Anyway, the OP, if you boil your rice in plain water, add a few cloves, a few green cradamoms, a stick or two of cinamon, few whole green chillies while you boil the rice.
