My routine:
-Close all doors
-Light candles throughout the main floor
-Turn the vent on high
-Cover hair
-In a small saucepan, boil orange peel, cinnamon, cloves, and cardamom (elaichi). Let it simmer while you cook, to absorb the smell.
-I've heard stainless steel absorbs scents. rub your hands on a stainless steel kitchen item to get rid of garlic, onion, etc scents. crate and barrel used to sell a stainless steel bar shaped like soap for this purpose. I don't know if they still have it.
Some people also do all their onion frying at once, and then just store the fried onions and use them as needed. This will minimize some of the smell, hopefully.

I am here to save you. Since we moved to VA everyone has been complaining how our home wreaks of desi salans. I do the same thing i did while i was in NJ but somehow it is harder to get rid of the smell in this home. Khair, this is what hubby and i have been doing and it works wonders. All the smell shmell is gone!!!
While cooking, on the next burner use a big pan and fill half full with water. Add any kind of potpourri you have at home along with cinnamon sticks and just let it boil first and after that let it simmer. It will mask all the salan smells. We let it cook for atleast an hour after we are done cooking and now our home only has a warm welcoming smell of potpourri.

This Pakistani girl I went to high school with had a major smell issue. Her clothes used to smell of some weird desi ghee/ salan type odor all the time and it was so bad that pretty soon other students in her class were complaining to the teachers. I got called into my counselor's office one day who wanted to know if we desi people had a ritual or something of that sort at home that triggered such smells because according to him, some cultures have weird traditions. I told him it was nothing like that and the problem was with the food they were cooking and not caring about everything else reeking later. The poor girl was then sent to the school nurse to determine what was causing the problem. I then had my mom speak to her mom, they had just moved down from Pakistan a few months ago and I guess you don't really encounter such issues in Pakistan so it was unknown to them. Anyway, my mom told her what to do, how to get rid of the smell, wash clothes regularly, shower, etc.. hopefully it worked for them because I didn't get called by anyone again.
Even at Masjid, especially during winter times, when I hug aunties sometimes, their coats smell unbelieveably gross. It's really important to take care of such things!
If u ever go to any Arabs house no matter how much they've cooked it doesn't smell.. and that's how I like it too! I will cook my korma, nihari and biryani's but I close the kitchen door leave the window open and burn a candle next to the stove..
When i'm done then I place orange peels sprinkled with cinnamon on a baking tray and turn the oven on.. (it smells really good) I also light an oil/oud burner in the entrance.

I burn scented melts in all rooms, they last for 5 hours and mey eeny meeny tiny place with a windowless kitchen doesnt smell a bit of any masalas or spices.
Except when Im making roast with rosemary and oregano, love that smell.
