Yes the one I used from tv show which was on youtube is pretty simple. I cannot wait to see how it turns out. still two more days before it will be ready for consumption. It has been rainy and cloudy for next two days , this achar needs sun for pickling.
I'll try to get the recipe tomorrow morning but what I can recall from the memory the ingredients were shaljam, mirch, raye, salt and water (not sure about sirka).
Here in London we had a 10 days of summer with temp going up to 23 but now the winter and clouds are back and its extremely cold - going to minus tonight again.

You are spot on on the recipe , yes there is no sirka. The pickling in sun process converts it into sirka anyway.

You are right , it will go bad if you use tap water that is why they advise to boil the water before adding it to achar and since I live in US and can get distilled water , I used that. Also this achar needs to be consumed in a week otherwise it starts to go bad in taste.:

I got our neighbours recipe - they do not put it in the sun, instead they boil it and then add lal mirch, raye (kut kar), salt and ginger garlic paste and keep it for another day to be consumed in the next two days!
My nani makes the mooosst ahh-mazing shaljam achar ever. And she makes two kinds. One is a little sweet and one is salty/sour. Let me know if you want the recipes. This recipe has been in our family for generations.
