sheer khurma

korma whatever the heck the spelling is… what is it exactly??? is it doodh sawaiyyan?? and what then, is sheer?? and shahi tukray? Im sure i’ve had all this stuff before just the names are getting confusing now :mudhosh:

Sheer khurma is a fancy version of doodh sewainyaan. It has many more nuts that are pre-fried.

Sheer is the short form of sheer khurma.

Shahi tukray is fried bread slices over which the thickened milk mixture is poured.

a sweet porridge made of dalia, dry coconut, saunf and I forget what else... my mom used to make it and it was delicious but most people have no idea what Im talking about

The basic difference between sheer khurma and doodh wali siywan is that in sheer khurma one uses rice as we do in kheer and then add siywan and other mivas. This makes sheer khurma more solid than doodh wali siywan which in are in liquid form.

Well some people do not use rice but cooks the milk so much that water evaporates.

May dad loves doodh sawaiyan and makes it every other day...lol.. what he does is boil sawaiyan, pour hot milk over them, add sugar to taste. I guess doodh sawaiyan doesn't have any complicated recipe, it is basically sawiyan in doodh...lol... I can be wrong...lol..

Milk 1 litre
Sivyan half cup broken
Rice one tablespoon powdered
Illahci sufeed 4 ground
Badam
Pista
Coconut
Sugar 1 cup

Cook till most of water evaporates.
You can skip rice if you do not want a think sheer khurma.

i love shee khurma and its cooked by my dad till eid's morning..ok put some ghee in pan...add some loong and green cardamoms open kr k so the seeds may crackle and give good aroma...then put ur saviyyan in it..roast it on medium heat...jalana nai hai..just bhoonna hai k inka colour thora sa change hojaye aur achi khushbu aye...sath he add kr dain almonds,pistachio,chchuharay(dry dates),chironji...and then add milk ..khoyya and let it cook till it becomes thick..also add sugar in it...add alag say thoray say doodh mai bheega zaafran...let it cook...and its served hot...garnished with more dry fruit..or if u dont know about how much sugar u should add and u dont find khoyya ..u may put sweet condensed milk..just half tin...and it becomes thick ....and gives a very nice taste!
