Just be honest. If you aren't comfortable with something just say no and tell them why.
In the case of borrowing: I tell my friends I don't borrow or allow friends to borrow because I don't want petty things to get in the way of our friendship. My friendship are not worth risking a damaged car or a lost favourite sweater so why tempt fate? Most of my friends understand and respect my feelings. The ones that don't, I am not too worried about. Can't please everybody.
