Sandwiches to Die For

I’m hooked on the Veggie Trio sandwich from a local place called Porta Via…

It contains the following:

lime avocado spread, grilled eggplants, zucchini and peppers with goat cheese on panini.

Now I want to make this at home so need help with grilling the veggies just right.
Say you have to make the veggies like the pics but don’t have access to a grill (I could do it on the bbq but want to know how to do it inside for the winter when I can’t get to the grill outside).

Is there a way?

Invest in a griddle pan? They work great to achieve the charcaoled flavour and look

Grill-pans! Brush them with olive oil and grill them, I make them the same way all the time but spread pesto onto multi-grain bread.

u could use a panini maker grill as well.

use an stovetop grill pan for veggies, they will not come out right on a panini press or a foreman grill, i mean u can try it, but i have and its not the same.

once the ingredients are ready and u have them in the bread, then u use the panini press.

I think I have one of those cast-iron grills somewhere in the garage........let me go looking....

Hmm, I don't know if this will help, Muzna. Do you have a toaster oven? My toaster oven has a grill like structure on it. And I've roasted/broiled bell peppers in the toaster oven and gotten a really nice char on them. If you have a toaster oven, perhaps you can brush the veggies with some olive oil and achieve the same look.

will it turn out just as nice, if the veggies are cooked on a stovetop?

okay… I had a griddle but not a pan with the grooves so I went and bought one.

the veggies turned out absolutely amazing!
and the sandwich was, truly to die for.
I even managed to get the avocado and lime paste just right!

I am so pleased with myself cuz I can do a mean biryani and a kick-butt nihari but sandwiches have never been my thing.
I should have taken pics!!!

since I don’t have a panini press I simply brushed some olive oil on the bun after the sandwich was assembled and pressed it with my spatula on the hot stove-top grill and voila!

Don't tease me I am a sucker for all kinds of sandwiches and pro at making them too.
I have all kinds of gadgets to churn out amazing sandwiches. I will start posting pictures.

I made two of these sandwiches last night and trust me they are pretty big......only managed to get my hands on half of one as hubby chomped down the rest.
As he was munching I was frying meatballs (i.e. koftay) and he decided that adding a sliced kofta to the sandwich would be ideal.....will have to try that next.

Please do list your sandwiches Mirch......I need to learn.

1 and a half medium sized, ripe avocados
1/2 tsp salt
3 tbl spoons of lime juice (or to taste depending on how tangy you like it to be)

since my avocados were pretty ripe I just mashed them to a paste
add salt and lime juice and off you go!

and how did u make the veggies? Would they come out just as well if they were cooked on a regular frying pan?
